Indian Barbeque Chicken

I was testing new cookware, so I used a completely different cooking method, but I wanted a nice spice combination for a chicken to go with a curry potato side. This was PERFECT. I omitted the yoghurt on account of allergies, rubbed the chicken with lemon juice and followed with the spices. Absolutely succulent flavor!

Easy Garam Masala

Much easier than the hour drive I have to any decent spice shop (for whole or ethnic spice blends). My curry tasted the same as when I use the store garam masala.

Roasted Rack of Lamb

Grilled Fish Tacos with Chipotle-Lime Dressing

Made this for my in-laws from San Diego. They said it was the best fish taco they've ever tasted. Definitely a keeper. Didn't have any Old Bay, so googled it and tried to throw together whatever I had similar.

Leek and Fennel Soup

I really altered this b/c of what I had on hand: only half a bulb of fennel but lots of stalks and fronds. I chopped up the stalks, dried the fronds on a baking sheet @ 150F for an hour, crumbled them, and added to the soup. I had 8 tiny red potatoes that were sprouting and an onion. I used 3 cups homemade chicken stock and 3 cups water. Salt and pepper were the only seasonings I used. I blended half the soup and then added about 3 cups of rice milk (my husband has a dairy allergy). It was creamy and tasty.

Chinese Sticky Rice Cake

Perfect! My husband has a dairy allergy so I used a can of coconut milk (and then 1/2c of almond milk b/c I didn't want to open a second can to make up the difference). I also used rice oil instead of canola. No other changes and came out perfect! I felt like I was back in Taiwan.

Creamy Rice Pudding

This came out perfect on the first try. I followed the recipe but used some common sense: my rice was short grain brown, and wasn't going to cook in the time given, so I just cooked the portion until the water was absorbed. Then I stirred the milk, sugar and salt in together and cooked *until it was creamy*! I blended my beaten egg into the remaining milk, and drizzled into rice while stirring (no problems). Added the rest of the ingredients and presto! Perfection. So, I think that my rule is make sure you have reached the desired results before going on to the next step. That avoids problems in the end and having to find shortcuts to accommodate the error.

Emily's Famous Marshmallows

Wow. I really needed kosher marshmallows, so I tried a "professional" recipe out of a cookbook and it was a horrendous flop (white gummi worms, anyone?). Still, necessity is the mother of motivation if nothing else, so I decided to brave this one. PERFECTION. Use a candy thermometer and get a pair of extra hands to keep the eggs whipping or use a standing mixer; those are the only extra tips I used. Otherwise I followed the recipe exactly. I was freaking out because it's a hot, humid day here, but that didn't have any negative effect. Yay!

Glorious Sponge Cake

Absolutely perfect. This was light, fluffy, and a gorgeous shade of golden. I made mine in a silicon muffin pan, for "strawberry shortcake". I also substituted vanilla extract and cardamon (recommended at the shortcake recipes) for the two lemon flavorings. The cakes were reminiscent of angel food cake in flavor and texture, without the hassle of measuring egg whites and having leftover yolks! Definitely a keeper!
