Baked Onion Dip I

Reviewed: Aug. 16, 2003
AWESOME - AWESOME! JUST TASTED THIS DIP AT A NEIGHBORHOOD OUTTING, BUT IT WAS MADE WITH 2 CUPS EACH OF VIDALIA ONIONS, MAYO AND SWISS CHEESE. PAPRIKA ON TOP FOR COLOR. I DON'T LIKE SWISS AT ALL, BUT YOU NEVER WOULD HAVE GUESSED IT. SERVED WARM WITH TORTILLA CHIPS. :-)

Not as good as "Fritz's Railroad Resturant" in Kansas City, but a great recipe to make at home with the kids!

Day Before Mashed Potatoes

Reviewed: Jan. 10, 2003
I always make these for Thanksgiving a day in advance. I use a potatoe ricer instead of mashing. Makes for a great creamy texture. There are a little dry the next day, so I add a little milk and or sour cream before reheating. Excellent taste!! Always get rave reviews!

Jamie's Minestrone

Reviewed: Jan. 10, 2003
This really is a GREAT recipe. I made it for after Christmas when we didn't need any more calories. I made my noodles (mini - egg bow ties) in a seperate pot and added them per individual, topped off with a small amount of fresh parmesan cheese. I didn't add the spinach, and I did use 1- 14 oz. can - Italian diced tomatoes, and only 1 -8oz. can of tomato sauce, frozen green beans, and 3 cups 98% fat free chicken broth, 1 cup of water, and only FRESH herbs. Served with homemade fresh bread! EXCELLENT!! I also made it ahead of time so it reduced time in the kitchen during the holidays.

ABC (Absolute Best Chewy) Chocolate Chippers

OUTSTANDING COOKIE - well worth the effort. The only thing I did differently, was instead of wetting my hands, I wet the scoop. The look of the cookie and the taste couldn't have been better. Thanks!!

Jamie's Cranberry Spinach Salad

Reviewed: Aug. 11, 2002
This is got to be the best salad ever! We eat this salad almost every night. My children ask for it! I use a light olive oil instead of the vegetable, and add cucumbers and tomatoes. For the almond part, I use "Sunkist Almond Accents" in the Honey roasted flavor. The dressing lasts for over a week in the frig, and it goes a long way. ABSOULUTLY SPECTACULAR!!

This recipe is ok - I love zucchini, but this wasn't what I thought it would taste like. I wouldn't make it again.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Mar. 21, 2002
I have reviewed this recipe before, but it's soooo good I had to rate it a 5 again. I also use this for OATMEAL CHOCOLATE CHIP COOKIES! Only changes - no spices - regular shortening - and 1 1/2 cups of semisweet chocolate chips! Just ate two out of the oven with milk. Just can't beat um'! ;0)

I thought it was good. Make sure you use a good molasses. It will make or break the recipe.

Great recipe, but you could make half of the dressing and there would still be enough. We used dried cranberries and it was awesome. THANKS!
