Delicious Egg Salad for Sandwiches

This is a good basic recipe. I was concerned about the comments about it getting runny because I was making ahead for sandwiches for a ladies tea party. I followed the advice of another reviewer and did half mayo and half cream cheese. I also used freeze dried chives instead of green onions. I made too much for my tea and the next day it is still not runny and still tastes great. Keeping this recipe with those changes.

Grilled Chicken with Peach Sauce

I'm not sure if I did something wrong, but I tried this twice and we couldn't taste the sauce at all. First I tried it grilled on a cutup chicken and couldn't taste the sauce. Next time I tried it when I grilled chicken breasts. I even marinated the breasts in the sauce all day before grilling that evening. Still no flavor. The chicken turned out well and was moist but I was disappointed in not having any extra flavor.

Smooth Sweet Tea

I tried this out because I am having an afternoon tea and want to serve iced tea as well as hot. Both my mom and I found this too sweet even though we both like sweet things usually.

Persimmon Bread II

I had enough pulp to do 3 batches of this bread. I made all 3 into muffins. If you do that, make sure you remember to cut down the baking time. (I almost burned my 1st batch.) All 3 batches I did cut the sugar as suggested by others. I did 1-1/2 cups. I think 2 cups would be a bit better. I also replaced the oil with apple sauce in all of them. The first batch I then did the rest as written. The next batch, I followed the suggestions to increase pulp to 1-1/2cups and delete the water. Tasting both batches together, we could taste a slightly higher persimmon flavor in the 2nd batch. The 3rd batch I kept the increased pulp and added extra seasonings as suggested by other reviews. We did not notice a difference. These were great muffins, no matter which variation we made.

Easy Spicy Roasted Potatoes

This was excellent! Had rave reviews from everyone and the mother-in-law asked for the recipe. I even forgot to put on the cheese and it still tasted wonderful. Plan on making again and adding cheese next time. :-)

Parmesan Crusted Baby Carrots

This was easy and tasted pretty good. Didn't find it outstanding, but good. May try roasting sometime. Used regular, full sized carrots chopped instead of baby carrots because that's what I had at the time.

Potatoes and Corn Soup

Whole family really liked this. I put this in the slowcooker and it turned out perfectly. Waited until late afternoon to add corn (last 2-3 hours) and added Lawry seasoning salt at that time. Didn't have chives so I didn't use that. Also used a potato masher and mashed up some of the potatoes before adding in the corn.

Family all enjoyed this recipe. I didn't have carrots so substituted bell pepper. I also forgot the final step of blending half the mixture. It has very good flavor.

Italian Chicken Skillet

This was a great way to use up leftover chicken. I cut up leftover chicken breasts and just warmed it up after cooking the garlic. I was out of spinach but added bell pepper with the garlic. Everyone in the family from my 9 year old to my 80+ year old mother enjoyed this meal.

Honey Baked Chicken

Followed recipe exactly. The breasts were thick so it took closer to an hour to fully cook but these were moist and delicious! I'm wondering if they were marinated in the sauce for several hours if it would be even better. I'm saving the leftover drippings to add to a soup later this winter.**Update**Making this for the 3rd or 4th time in a month. My son specifically asked for this meal. It's definitely a keeper!

Leftover Roast Brunswick Stew

We really liked this. I don't use canned veggies, so used frozen instead. I added a cup of water to make up for not having water from canned corn, but it was a bit too much, maybe 1/2 cup at the most. I also didn't have much bbq sauce, maybe about a cup was all that was in my bottle but it was plenty, giving it just enough flavor. Used beef boullion cubes instead of beef broth.

Veggie Lasagna Rolls

I didn't make this exactly according to the recipe but it was the recipe I found that had veggies and used tomato sauce, the other veggie lasagna's I found had white sauces that I'm not sure my boys would like. I exchanged the sliced carrots, peas and broccoli for 3 cups of frozen mixed veggies because that's what I had on hand and added half a package of frozen spinach, I kept the rest of the ingredients the same. I didn't roll the veggies, I just layered like regular lasagna because I was running short on time. It turned out WONDERFUL! It's an excellent base recipe. I might try stuffing manicotti noodles with the veggies from this sometime. We will definitely keep this recipe. Thanks Chrissy!

Baked Vegetables II

I thought 5 onions sounded like a lot, so I only used 1, but the dish didn't have enough flavor in my opinion so maybe you do need that many onions. I think it needs salt and other seasoning as well. I thought the recipe was OK. I used a package of frozen veggies that had alot of the same veggies that the recipe called for, so that made it pretty easy. I will probably make again, but play with more seasonings to bring out more flavors.

Brown Rice, Broccoli, Cheese and Walnut Surprise

My husband and I really liked this. I didn't use the instant brown rice, but cooked regular brown rice the whole 45 minutes in the onion, garlic and butter. It turned out sooo good. Didn't have walnuts, but didn't miss them.
