Quinoa Side Dish

Reviewed: May 7, 2011
Loved it. Used a bit of dried thyme because I didn't have it fresh. I also used chicken broth instead of veg broth. In my opinion, the lemon is NOT optional. It made this dish fantastic. No leftovers!

Peppermint Meringue Cookies

Reviewed: Dec. 16, 2010
Great "cookie" to round out a holiday cookie assortment. Made the meringues exactly as recipe stated, with a little less candy cane because I only had 2. I crushed up my candy canes in my mortar and pestle. One fine and the other more coarse to sprinkle on the top. I also piped them out and they look adorable. Oh, I only baked mine for 60 minutes. Start checking them at 45 minutes, knowing they will crisp up more when they cool off. Thanks for the recipe!

Three Chile Dry Roasted Tomatillo Salsa

Reviewed: Sep. 24, 2010
This was amazing. The dry-roasting brought out wonderful flavors. Make sure you have your kitchen exhaust fan on though! Also, my local market didn't have the recipes chiles so I used 2 jalapeno, 2 serrano, 1 poblano and 1 anaheim so I am certain my end result was far less spicier than the posted version. Can't wait to make again!

Cinnamon Crackle Cookies

Reviewed: Dec. 5, 2009
First Christmas cookies of the season! Used a cup of butter (no shortening). Did not have a lemon, so no lemon peel. Only used 3/4 cup sugar and 1 teaspoon of nutmeg, due to other reviews. Looked simply beautiful and taste absolutely yummy!

Marinated Grilled Shrimp

Reviewed: Jul. 2, 2009
Excellent. Cayenne definately mellows out. (As evidenced by my 3-year-old devouring these.) This recipe has been entered into our staple recipes!

Baked Paprika-Parmesan Chicken

Reviewed: Jul. 2, 2008
Took to a picnic and it held up nicely. I served it cold and it was wonderful. I added about 3/4 teaspoon of garlic powder as suggested. I also used olive oil with a smidge of butter to brush on the top. Will make again.

Green Bean Salad

Reviewed: Jul. 2, 2008
Excellent! We took this to a picnic. It held up well and was a nice, crisp veggie side dish. Used fresh or frozen veggies, no canned. Used red pepper instead of green. (No pimentos.) Replaced white vinegar with apple cider vinegar and used WAY less sugar. I actually used agave nectar to sweeten it and only used 2 tablespoons of it, or so. Will make often. So yummy!

Di's Delicious Deluxe Deviled Eggs

Reviewed: Mar. 21, 2008
YUM! These got raves when I made them. I felt they could use a bit more hot sauce, to taste. Note: If you're not a celery fan than find another recipe. I thought the celery was a nice texture and flavor in this recipe, but it not like traditional deviled eggs.

Indian Barbeque Chicken

Reviewed: Feb. 23, 2008
I thought this recipe tasted fabulous. The flavors were fantastic. I did not have any meat tenderizer, but it didn't seem to need it. My only complaint was that the chicken was an unappetizing bright yellow color with blackened grilled stripes. I sprinked it with some paprika and chopped cilantro to try to pretty it up, to not much success. The taste made up for it though.

Mexican Rice III

Reviewed: Feb. 23, 2008
Yummy! I had to modify it a bit because I did not have all the ingredients. I used brown basmati rice, an orange bell pepper, added a bit of cayenne instead of jalapenos, and used 2 cloves of minced garlic...And it still turned out fabulous! I will remake it again using the correct ingredients to compare. I can tell that the basic recipe is definately a keeper. I made it for eight people tonight included 4 kids under 8 years old and they all loved it.
