Chocolate Chip Orange Zucchini Bread

It was great! I especially liked the crunchy crust as contrasted with the sweet moist interior. I had to bake it an extra 15 minutes for it to be completely done. No problem with that, though. It was worth the wait.

Raw Apple Cake

My daughter asked that I make it without the frosting. The top comes out nice and crunchy. I made it with the raisins, nuts, 1/2 apples and 1/2 pears. I think it would be super served warm with a scoop of vanilla ice cream!

One Egg Lemon Pound Cake

It took 60 minutes to bake, but came out very nice. It wasn't too crumbly for my taste, though. I didn't have lemon extract so I used the grated rind of one lemon and that worked out fine.

Beef Stew VI

I didn't like this recipe at all. Maybe I'm just not a stew eater, but I thought the gravy was too thin and the seasonings weren't hearty enough to bring out the flavor of the meats and vegetables. Celery in stew doesn't thrill me either.

Wow! These were great. Very moist with just the right taste of apples. My kids loved them. I went to eat the leftovers next morning (I made a double batch right from the start), but someone got to them before I did. Must go make some more now...

Gingerbread Pancakes

Although I was excited by the enticing ingredients, the final results did not find favor with me. The abundance of baking powder caused a volcano-like effct of the batter. Six extra egg yolks remaining after making pancakes seemed like a waste. In addition, two of my three kids said they liked the flavor of other pancakes I make much better. Sorry!

Dad's Double Whole Grain Pancakes

These are great pancakes. They are also a delicious way to get some whole grains into your diet. I tried them spread with blueberry preserve because they came out very thin for me. Very tasty!

Easy Pesto

Wow! Do I like this recipe! It's quick and yummy. Just the thing to do with a handful of fresh basil straight from the farmer's market. I simply toasted slivered almonds on a hot, dry skillet until lightly toasted and fragrant. Forget the oven!

Mexican Rice II

I would not make this recipe again although it tasted good. The rice wasn't cooked when the time was up and the water was gone. I had to add water to it to get the rice to finish cooking. Somthing was awry, but I don't know what it was. I can generally cook rice with no problem.

Fresh Cherry Crisp

This was a great way to use those farmer's markets' fresh sour cherries that come along only too infrequently. The crisp topping works really well with the sweetened tartness of the baked cherries. I'm sure this would be good with ice cream, but it didn't last long enough for us to try it that way!

Benne Wafers

I made them way too big and they all ran together. Not to worry! I had them on a piece of aluminum foil that was sprayed with cooking spray. I just hacked them apart with a knife and carefully moved them off the tray to cool. The taste was perfection. Chewy and scrumptious! A lot of trouble, but I guess it was worth it.

GA Peach Pound Cake

This cake is yummy! I made it easy on myself by baking it in a 9x12 pan (first sprayed with cooking spray) and leaving it in the oven for just 45 minutes. I served it warm with ice cream. It got rave reviews from my husband!

A-Number-1 Banana Cake

This is a great way to use up ripe bananas. I made it in a 9x12 pan, but was afraid it was going to turn out too plain. I jazzed it up a bit with a cream cheese frosting and some mini chocolate chips on top. It looked very pretty. My family liked it a lot, although I prefer unfrosted cakes a bit more.

Cocoa Apple Cake

I made this cake in a 9x13 pan by baking it at 350 for 45 minutes. It was indeed tasty and moist. It had a funny, spongy texture, though. The only changes I made were to use apple cider instead of water and use half margarine/half butter instead of all butter. I did not frost it because it was sweet enough with the mini chocolate morsels I added.

This was delicious! I used it to marinate some frozen whiting filet. I let the fish marinate while it was defrosting, and then put everything in the broiler. It was so simple to make, and my family loved it!

This is an outstanding recipe. It comes out very moist, yet the walnuts make it crunchy. No alterations need to be made. The first time I made it, it came out just perfect! Highly recommended.

Grandma's Pumpkin Tea Bread

Mmmm! This recipe is perfection! I knew it would turn out well just by smelling the batter. I deleted the butter-flavored extract because I don't like having to use artifical ingredients (plus I didn't have any!) :-) I also added about a cup of raisins. The tea bread came out dark, spicey, moist on the inside, crunchy on the outside. Careful, though! Test it well before taking it out of the oven. I had to bake my two loaves for 65 minutes. Perhaps because the temperature was 325. Nevertheless, it is a delight! Oh, yes...I also used my leftover jack-o-lantern to make the puree for this tea bread. I'm glad I still have some puree left. Think I know what I'll do with it! :-)
