Oriental Cold Noodle Salad

This recipe is perfect. I just love it!! I usually substitute whole wheat spaghetti, broken into thirds *before* cooking, for the soba noodles - only because those are the noodles I usually have at home. More often than not, I eat this dish warm because I cannot wait for it it cool. It's scrumptious!

Noodle Kugel (Dairy)

This recipe was perfect. I used an immersion blender to whip my cottage cheese until smooth. That was so easy! I added 1 cup dark raisins to the cheese mixture before baking. This kugel was scrumptious!

Sloppy Joes II

Oops! I left out some ingredients, but it came out perfect anyway. I skipped the bell pepper, salt, black pepper, and brown sugar. I used chopped spring onions instead of regular onions (the taste is milder). What can I say? Both my husband and I thought this was scrumptious. Next time I'm doubling the recipe!

Out of the Hat Rice

I give this recipe 5 stars for ease of preparation and being tasty. I used margarine instead of butter (to keep it parve to serve with chicken). Oops! I forgot to rinse the rice. No problem. It came out fine anyway. This recipe is a keeper. I also printed it out for my daughter to make for her fiance. I loved the idea of using an ice cream scoop to dish out the rice on a bed of greens. I did that, and it looked so pretty!

Mediterranean Lentil Salad

This is a nice and very easy recipe. I couldn't wait for it to cool to eat it. The only variance I found with the original recipe is that it took my lentils 25 minutes to cook. My friend, with whom I shared this dish, did not want the lentils to be the least little bit hard.

Asparagus, Potato, and Onion Frittata

This was a failure for me because the grated potatoes stuck to and burned on the bottom of my pan. I'll not make this again, but I will say it tasted good and my daughter even liked it. Perhaps if I had started instead with thinly sliced potatoes, the procedure would have gone better. Who knows?

Home-Style Country Sausage

This is a superb recipe. I changed nothing except used a pear instead of an apple (as that was all I had). My husband who never eats fruti and meat together didn't even know there was fruit *in* his meat. My daughter who doesn't eat turkey (which she doesn't like) ate it. The seasonings are perfect.

Green Bean Stir-Fry

The beans never cooked through so I ended up adding some water and steaming them. I wouldn't stir fry the beans this way again, but the sauce was great. I'll save the recipe for the sauce and double it next time. I'll probably roast the beans, though.

Caramelized Baked Chicken

This recipe did not work for me. Too much sauce and too watery. I ended up draining out most of the sauce to see if I could get the chicken to get a nice coating in the end. No dice.

Joe's General Tso's Chicken

The recipe was okay, but I don't think it was much like the General Tso's chicken that I usually get as take-out. Maybe that was because I used sherry as I didn't have rice wine? I doubled the recipe and the sauce, but the sauce evaporated away as soon as it hit the hot pan. I'll probably continue to look for a recipe more to my liking for this dish.

Spicy Shredded Beef

The recipe came out very tasty, but I did add one minced jalapeno pepper for flavor. I never did shred the beef, but cooked it a little less time and just served it on hot rice. In addition, I used diced, fresh tomatoes from my garden instead of canned tomatoes. At the very end, I just added a tiny bit of water to keep it from burning. The sauce was nice!

Zucchini Brownies

I thought this was a great recipe. It's a wonderful way to use up zucchini. Plus, it's an easy recipe to follow. I didn't make the frosting as I don't like things that are overly sweet. The batter starts out dry, but it should be mixed until the zucchini moistens the whole batter evenly. I added a tsp of dry spearmint leaves when mixing the batter ingredients. Then, the semi-solid batter should be pressed evenly into the baking pan. It's very, very tasty when done.

Zucchini Patties

Excellent recipe. I used 1/2 tsp salt and 1/4 tsp pepper, but I'd up the salt a bit. I squeezed out the zucchini to make it dry beofre making the pancake batter. I added one garlic, finely minced. The next time I make these pancakes, I'll add one scallion, finely chopped for more color.

Spinach and Potato Frittata

This is an easy and tasty recipe, and one that I highly recommend. I needed to add a few more minutes at the end to get the eggs to completely set. I was out of spinach, but just used salad mix for the greens. I also minced my garlic instead of crushing it. My husband loved this dish. Try it!
