Asian Rainbow Trout

Way too salty! Salting the fish and adding (even reduced sodium) soy sauce made this almost inedible.

Kidney Bean Salad

This is a great classic salad that I remember from my youth. My family does not care for sweet pickle, so I used dill pickle relish and it was great!

Green Bean Bundles

I make these every year for the holidays. They are fabulous. I use whole frozen green beans and steam cook them until they are still crisp. Thin sliced bacon works better than thick. Definately, marinate overnight before cooking.

Buttermilk Parmesan Potatoes

With a few modifications based on other reviews, this was a nice change from standard au gratin potatoes. I increased garlic to 4 cloves, used 1 small onion sliced into rings, increased the buttermilk to 1-1/2 cups and added 1 Tbsp. dried Rosemary, crushed. I also topped with Italian style bread crumbs and drizzled a little olive oil over the top.

Mexican Baked Fish

This was pretty good for such a simple recipe. I used Cod, but becuase of the boldness of the other ingredients, a stronger tasting fish would work just fine.

Loose Meat on a Bun, Restaurant Style

Definately not a "Made Rite" but still a good sandwich. I added 1 tsp. chili powder and 1 tsp dried mustard. I also decreased the broth to 1 - 14oz. can, and placed all ingredients in the crock pot on low.

Five Hour Stew

The meat was extremely tender in this recipe. However, the stew needed more seasonings. I may try pre-seasoned crushed tomoatoes and add other seasonings such as oregano and basil next time.

Three Bean and Artichoke Salad

This is a great salad, but I found the original recipe to be a little bland. I added some roasted red pepper and minced red onion for color. Also, I added some fresh basil and minced garlic to the dressing. Terrific for summer.

Cabbage on the Grill

I've been making a similar recipe for years. I have a few tricks to save time and add flavor. I microwave the cabbage wedges for 5 minutes prior to placing in foil. This saves about half of the grill time. I wrap each cabbage wedge with a slice of bacon (turkey bacon works great). I place a teaspoon of margarine on each wedge and sprinkle with Garlic seasoning such as Mrs. Dash.

Grilled Sausage with Potatoes and Green Beans

This is delicious and quick to prepare. I followed the suggestions of other reviewers and sprayed my foil with non-stick cooking spray. I drizzeled with olive oil and omitted the butter. I used grill seasoning in place of salt and pepper, which really jazzed up the flavor. I also used some chicken stock I had on hand instead of water.

Greek Garbanzo Bean Salad

Quick, easy and flavorful. I seeded the cucumbers before before added to maintain crispness. I also added some chopped colored peppers and increased the amount of feta cheese.

Grilled Salmon II

This is absolutely fabulous! My husband is not the biggest fan of Salmon, but he raved over this. I substituted olive oil, since I did not have peanut and it was fine. Also, I omitted the salt, since the soy added enough saltiness. I grilled on our gas grill at medium temp. (400-450) for 5 min. per side. My fillets were 1 inch thick. I will make this again, for sure.

Crab Stuffed Flounder

Beer Butt Chicken

This chicken is fabulous and the recipe is great as is. One tip, however, is to make the seasoning mixture in two batches. One half to pour into the beer can and the other half to reserve and use as baste. This allows the seasonings that sink to the bottom of the mixture to flavor both inside and out! Yummy!

Irish Lamb Stew

This is an excellent recipe. I used 2 lbs. each of beef and lamb stew meat. I also added a bottle of Guinness and doubled the amount of potatoes. I let the stew sit in the refrigerator over-night and added another cup of beef broth when re-heating. It was a big hit!

Oven Brown Rice
