Stuffed Pork Chops I

Reviewed: Dec. 15, 2014
Awesome recipe just as it is! I used two large thick cut Iowa chops and baked about 10 minutes more.

Stephanie's Freezer Spaghetti Sauce

Reviewed: Nov. 11, 2014
This is simply fabulous as is! This is the second year I have made it using the end of the year tomatoes from my garden. One slight variance - I use fresh herbs that I also grow. They make for a very fresh tasting sauce, especially in the middle of winter!

Old School Mac n' Cheese

Reviewed: Nov. 11, 2014
I followed the recipe exactly, but halved it for one 9x13 casserole. The recipe was not as creamy as I anticipated it would be. The seasoning was good. For my family, I will use half the amount of cayenne next time. To add creaminess, I might add some half and half to the cheese mixture right before stirring in the macaroni. The best part of this dish was the amazing topping. So, yummy! I will make this dish again, and will try some variances to achieve a creamier consistency.

Healthier Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 21, 2013
Cookies did not spread out at all. If you want flatter cookies, you may want to press them down a little with the bottom of a glass before baking. The addition of cloves really did give the cookies a nice spicy flavor. I also added a cup of chopped pecans. Not overly sweet, so even makes a nice grab and go breakfast, with yogurt or milk.

Luscious Lemon Cake

Reviewed: Dec. 30, 2012
Yes, this cake was luscious. I followed the directions exactly, except I substituted lemon juice for water in the cake mix. I was concerned about the glaze preparation based on reviews from others. I made a few adjustments to avoid the cake sticking, and it worked perfectly. I prepared a non-stick bundt pan with non-stick spray and flour. I baked the cake for 45 minutes, removed from oven and cooled about 10 minutes. I prepared the galze dissolving the powdered sugar and lemon juice over heat, but not to boiling. I poured it over the cake in the pan (after the cake cooled for 10 min.), then let it cool an additinal 20 minutes before releasing it onto a plate. I sprinkeled it with more powdered sugar before serving. I was moist and delicious.

Asian Rainbow Trout

Reviewed: Jan. 14, 2012
Way too salty! Salting the fish and adding (even reduced sodium) soy sauce made this almost inedible.

Kidney Bean Salad

Reviewed: Jun. 6, 2011
This is a great classic salad that I remember from my youth. My family does not care for sweet pickle, so I used dill pickle relish and it was great!

Green Bean Bundles

Reviewed: Dec. 29, 2009
I make these every year for the holidays. They are fabulous. I use whole frozen green beans and steam cook them until they are still crisp. Thin sliced bacon works better than thick. Definately, marinate overnight before cooking.

Buttermilk Parmesan Potatoes

Reviewed: Apr. 8, 2009
With a few modifications based on other reviews, this was a nice change from standard au gratin potatoes. I increased garlic to 4 cloves, used 1 small onion sliced into rings, increased the buttermilk to 1-1/2 cups and added 1 Tbsp. dried Rosemary, crushed. I also topped with Italian style bread crumbs and drizzled a little olive oil over the top.

Mexican Baked Fish

Reviewed: Mar. 13, 2009
This was pretty good for such a simple recipe. I used Cod, but becuase of the boldness of the other ingredients, a stronger tasting fish would work just fine.

Loose Meat on a Bun, Restaurant Style

Reviewed: Jan. 16, 2009
Definately not a "Made Rite" but still a good sandwich. I added 1 tsp. chili powder and 1 tsp dried mustard. I also decreased the broth to 1 - 14oz. can, and placed all ingredients in the crock pot on low.

Five Hour Stew

Reviewed: Jan. 10, 2009
The meat was extremely tender in this recipe. However, the stew needed more seasonings. I may try pre-seasoned crushed tomoatoes and add other seasonings such as oregano and basil next time.

Three Bean and Artichoke Salad

Reviewed: Sep. 6, 2008
This is a great salad, but I found the original recipe to be a little bland. I added some roasted red pepper and minced red onion for color. Also, I added some fresh basil and minced garlic to the dressing. Terrific for summer.

Cabbage on the Grill

Reviewed: Jul. 21, 2008
I've been making a similar recipe for years. I have a few tricks to save time and add flavor. I microwave the cabbage wedges for 5 minutes prior to placing in foil. This saves about half of the grill time. I wrap each cabbage wedge with a slice of bacon (turkey bacon works great). I place a teaspoon of margarine on each wedge and sprinkle with Garlic seasoning such as Mrs. Dash.

Grilled Sausage with Potatoes and Green Beans

Reviewed: Jul. 18, 2008
This is delicious and quick to prepare. I followed the suggestions of other reviewers and sprayed my foil with non-stick cooking spray. I drizzeled with olive oil and omitted the butter. I used grill seasoning in place of salt and pepper, which really jazzed up the flavor. I also used some chicken stock I had on hand instead of water.

Quick, easy and flavorful. I seeded the cucumbers before before added to maintain crispness. I also added some chopped colored peppers and increased the amount of feta cheese.
