Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
My family absolutely loved these!! I always thought fish tacos sounded disgusting but I like to be open minded about trying new things. I only made some minor changes--used orange roughy, eliminated the cayenne pepper, and used only one chipotle pepper. For one c. mayo, one pepper gave just the right amount of heat if you only like it mild. I doubled everything but will make a lot more chipotle mayo next time.

Calico Bean Soup
I can never find yellow split peas so I substitute the green. I also substitute other beans I may have on hand, such as black or navy beans. I keep a large container of the mix in my pantry to toss in the crockpot. This recipe is so good and easy, you can't go wrong!

Herbed Chicken Nuggets
These were very tasty-my kids & hubby LOVED them! They brown up nicely if you cook them longer-I just kept checking till they looked right. I used a 3 lb bag of chicken tenders and doubled the ingredients. I did not have any wheat germ so I just substituted panko bread crumbs. I also did not use the red pepper flakes due to the kids. I will use this recipe over and over!
