Gluten-Free Double Chocolate Cookies

Very good recipe. Cut sugar back 1/2 cup, added small amount chocolate chips, lined cookie sheet with parchment paper. Had no trouble getting them off sheet. These spread quite a bit. Taste reminds us of the Enjoy Life brand double chocolate cookies.

Chewy Sugar Cookies

I didn't have any margarine so i used about one cup butter. Also cut the sugar back by 1/4 cup. Added 1 package True Lemon powder to 1/2 dough. If you like sugar cookies, this is good recipe. Personally I'd rather have chocolate.

Favorite Banana Blueberry Quick Bread

Like many other people, I made some changes: 3/4 cup fresh blueberries, 1.5 cup flour, 1/4 cup oatbran, 1/4 cup margarine, 1/4 cup pumpkin puree, 2/3 cup sugar, 1/4 tsp allspice, 1/2 tsp cinnamon, 1 tsp banana flavoring. Made 16 muffins. Baked 20 minutes. Very tasty. Banana flavoring brings out the taste of the bananas.

Date Nut Loaf Cake

Very good loaf. I cut sugar to 3/4 cup, exchange 1/4 cup water with Captain Morgan Spiced Rum which I marinated the dates in for a couple hours, used 2 tsp rum flavor instead of vanilla. Also cut back the butter a bit, maybe 2 tablespoons. Baked for 40 minutes. Turned out very moist & tasty. When cooking the dates, don't allow all the liquid to cook out. Bring them to boil, stir in sugar & butter, then remove from stove. Makes for moist loaf.

Basic Pizza Crust

Really good, easy to make dough. Dissolve sugar in the warm water prior to adding yeast. For more flavorful dough, add more salt and spices like onion powder, garlic powder, Italian seasoning, thyme. I also kneaded the dough for a few minutes prior to resting it. Turned out very good. Will use recipe again.

German Apple Cake II

Made this in a bundt pan. Used 1/2 oil, 1/2 applesauce, didn't bother with icing. Added 2 tablespoons Capt Morgan Spiced Rum to chopped apples. let them sit while preparing other ingredients.Good stuff. Tasty cake. Batter definitely needs to spooned into well greased pan.

Cantaloupe Bread with Praline Glaze

After reading reviews, I cut oil to 1/2 cup, reduced sugar to 1.5 cups, increased pureed cantaloupe to 2.5 cups, exchanged vanilla extract with lemon extract, added about 1 tsp orange zest, 1 tsp lemon zest and 2 tbsp poppyseeds just for fun. Skipped icing. Bake in bundt pan for about an hour. Really moist cake, interesting taste.

NY Style Rye Crackers

Recipe has lots of room for variations. Can use different herbs & spices, make them salty or sweet, thick or thin. I used 1 cup rice flour, 1 cup all purpose, coconut oil & canola oil totalling 1/3 cup, no caraway or honey, a pinch of dill, basil and coriander and sprinkle cracked pepper on some. I found I needed to add more water than the recipe calls for and would cut the salt in 1/2. Overall, these were tasty.

Caramel Popcorn

I too have been using this recipe for years. It's very important to use butter not margarine. Margarine has too much water in it. Instead of vanilla, I've used rum flavour. I've also used maple flavour. Both are excellent. As I use salted butter, I do not add any additional salt. When I bake it, I line my sheets with parchment paper. Makes stirring and clean-up easy.

Pumpkin Bread IV

Very tasty!! Like other reviewers suggested, both sugar and oil can be cut back. I made this recipe into muffins (bake at 350 for about 18 minutes). Next time I make this, I think I'll add some chopped walnuts and some sunflower seeds. Thanks for the recipe!

Almond Lemon Chicken

This is a very delicious way to prepare chicken. I took the advice of other reviewers and cut the oil way back, added white wine to the marinade and allowed the chicken to marinade for more than the hour suggested. For the almonds, I just sprinkled a little bit of chopped almonds on top of the chicken then baked the chicken in a 350 degree oven until cooked. I skipped adding orange marmalade because I didn't have any. Chicken turned out very juicy and tender. Will definitely make again.

Henry and Maudie's Oatmeal Cookies

I took the advice of other reviewers and cut back sugar. Wish I would have also cut back water because after a day of being in a container, these became very soggy. I agree with the others who said there are better oatmeal cookie recipes and I too do not understand how you get 60 cookies from this recipe.
