Paneer

This did not work out well at all. The cheese did not maintain its shape when I went to fry it, and I was left with a big, oily cheese pile. I've fried paneer before, and it was nothing like this.

Mexican Rice II

This turned out tasty, but just a couple of problems: 1. After years of making risotto, I know that rice does not "puff" due to frying--liquid is required to make rice puff. So your rice is not going to puff in step 1. 2. This required as much as 2x as much liquid as specified in order to get the rice cooked past "al dente". I was trying to make it for a dinner party and had to keep adding liquid. Kinda stressful. Everybody liked it, though.

California Smoothie

Awesome smoothie. My yogurt comes in 6-ounce containers, so that's how much I used. I also added a handful of oats and some flaxseed. Delicious. Next time, I may try vanilla yogurt since that's what's in the fridge. Definitely a go-to smoothie recipe.

Cream Filled Cupcakes

Fantastic recipe. The cupcakes turned out just right. They had a consistency very similar to Hostess cupcakes, but with no nasty chemical aftertaste! Everyone loved them.

Spicy Thai Vegetable Soup

This was delicious. A little too spicy. I would recommend either the chile pepper OR the pepper garlic sauce, not both. Like others, I did not blend the soup, but that might be worth trying in the future. I skipped the saffron and added the juice of half of a lime since I thought it was missing a little something.

Dominican Style Oatmeal

I'm not a huge oatmeal fan, but this is definitely the way I will be preparing oatmeal for the foreseeable future. Delicious. Add a little bit of dried fruit or some nuts for some variety.

Chewy Chocolate Chip Granola Bars

These were fantastic; we really enjoyed them. I was just looking for a way to use up some extra wheat germ. The only downside was that they are kind of crumbly, definitely not eating in the car material. But as far as healthy and tasty go, five stars all the way.

Japanese-Style Deep Fried Chicken

This was delicious and very easy to make.....the whole family enjoyed it, even Little Miss Picky. If you don't have a deep-fry thermometer, put a wooden utensil into the oil and touch the bottom of the pot. If bubbles rise from there, the oil is hot enough. If A LOT of bubbles rise, it's too hot, turn it down a little! I put paper towels in a pasta plate and kept it in the oven at 170 till all of the chicken was fried. Even the chicken I cooked first was still in good shape when it came time to eat!

Mashed Potato Dream

I loved these mashed potatoes. Mashed potatoes are my favorite food, so I was a little hesitant to try something different from the old standard I'm used to, but these were fantastic. The horseradish really doesn't end up tasting like horseradish, and with such a small amount, it doesn't make the potatoes "spicy" or anything. It's just a really good flavor. I didn't have green onions, so I used regular white onion, chopped. I will try the green onions next time, though. Highly recommended.

Easy Salmon

This was not terrific. The best thing that I can say about it is that it would make a good diet food; it doesn't have much in it to make it unhealthy, and it's not awful. It's just not at all good, either. The taste of the lemon juice does not mingle with the Italian dressing, and the Italian dressing doesn't mingle at all well with the salmon taste. We definitely won't make this one again.

Japanese Zucchini and Onions

Best Ever Corn Muffins

These were pretty good. The taste was excellent. They stuck to the muffin cups like nobody's business, though. I guess next time I will use melted butter or oil instead of non-stick spray. Non-stick spray did not work AT ALL.

Tzatziki VII

This tzatziki was fantastic. We actually like ours a little runny, so after I drained the initial batch of yogurt, I added some undrained yogurt back in. Substituted some garlic salt for part of the garlic. One thing is essential, though: THE FLAVORS MUST BLEND. This was not that great initially, just after everything was mixed. A couple of days in the fridge, delicious.

Salsa Chicken Rice Casserole

We loved this, even the picky little kids we had eating with us. I wasn't sure that I liked my first bite because it seemed like the layers had not "melted together" or blended. But as I continued eating, I actually liked the fact that the flavors were separated a little bit. This is also excellent as leftovers!

Mushroom Stuffed Chicken Rollups

So glad I found this one! I was making a different recipe off of this site (Chicken with Mushrooms), and I remembered how tasty this one was, but I wasn't sure if I had found it on AllRecipes or not. This recipe is delicious, definitely something you can serve to guests at a nice dinner party. Ends up looking and tasting fancy, but it's not too much work! The taste of it is so rich.

Chicken With Mushrooms

The best thing about this chicken was that it came out really moist. I had pretty big breasts (hee hee!), so I pounded them flatter than they were before breading them. My only complaint about the recipe was that it came out a little bland. This was even after I added some Lawry's season salt and parmesan to the breading mixture. I would have liked to have had just a little more flavor.

Cabbage Sloppy Joes

My family thought this was fantastic. Everyone enjoyed it; no one noticed the cabbage or knew what it was. I put in a little bit less ketchup than the recipe called for because I prefer a less-sweet sloppy joe, but this was great. We will make this our family's sloppy joe recipe of record!
