Brookies (Brownie Cookies)

EXCELLENT RECIPE! Not overly sweet, either....I've seen some recipes that I know would just be too sweet (seriously, it is a brownie on top of a cookie!) but this recipe has a good balance of sugars. My two "issues:" 1.) the cookie dough layer is VERY DIFFICULT to spread over the bottom of a 13 by 9 inch pan. It's like this recipe needed just a little more "dough." 2.) You seriously have to let this recipe cool completely...like maybe even put it in the fridge (I did) before trying to cut it. The bottom cookie layer is definitely softer, so it needs to be cooled completely before cutting otherwise it is a big mess. So...just don't think you can make this and eat it soon after!

Sam's Famous Carrot Cake

Definitely 5 stars! I did use a 13 by 9 inch stoneware pan instead...ONLY NEEDED 45 MINUTES, not an hour, so just monitor it for your oven / pan as needed. Other than leaving out the raisins, I followed the recipe exactly. Wonderfully balanced flavor and consistency! Tastes delicious the next day, too! Thanks for sharing this, and I hope people enjoy this as much as my family did!

Mini Pumpkin Butterscotch Muffins

NO MODIFICATIONS NEEDED! This recipe is PERFECT! I have made it 3 times in the last 2 weeks....perfect every time....exactly 48 mini muffins. I've used both the butterscotch chips and chocolate ones. Delicious both ways! FINALLY A RECIPE that doesn't need you to read everyone else's reviews to get the best version. THANK YOU!!!

Chocolate & Peanut Butter Chip Oatmeal Pan Cookie

VERY disappointed in this recipe. First, there's a note AT THE BOTTOM saying that this is for a DOUBLE BATCH, and that didn't print out on the recipe. Seriously, who writes out a recipe using the measurements for a DOUBLE BATCH?!?! So, I had to deal with way too much batter, and then try to split it between 2 pans. (Of course, I didn't have 2 of the same size, either. so half are thicker than the other.) I was hoping that the taste would redeem this recipe, but it didn't. WAY too much butter...it doesn't exactly taste like a cookie or have a consistency "more like a brownie" as promised. It doesn't necessarily taste bad, but it's not what I wanted to make either. Overall, a poorly written recipe with sub par results. Don't waste your time.

Key Lime Cake II

This cake is delicious....but I didn't like the glaze / icing. Just makes the cake too boring. I rather see this cake frosted with a light, white, fluffy frosting. Also - my grocery store was out of Key Lime juice in a bottle, so I had to HAND-SQUEEZE the 8 Tbsp....and that TOOK A LONG TIME!!! Don't recommended doing that, but the Key Lime flavor was very good at least!

Autumn Cheesecake

ABSOLUTELY DELICIOUS!! A big hit at Thanksgiving! I did these modifications: 3 packages of cream cheese, extra 1/4 cup of sugar and an extra egg in the cheese layer, I diced the apples and put them in the microwave for 1 minute to remove excess moisture, and I baked it for 70 - 75 minutes in an oven that had a pan of water on the rack below the cheesecake. I also added a little cinnamon to the cheese layer. I did not think this recipe was very hard, and the results are delicious, so it is worth the prep time. I will definitely make this again.

Lemon Coconut Squares

VERY GOOD....the coconut on the top is unique and adds a slightly "crisp" top instead of just a plain top or powdered sugar. These held their form nicely as well...I have made some recipes that are just too mushy, but not these! I have made them a few times, and always receive compliments! Definitely worth a try!

These were a big hit! Extremely easy to make and taste great. The ranch mix in the cream cheese is key. I omited the onions and just used green, red, and yellow peppers. Delicious....will make again!

Pumpkin Pie Bars

These are EXCELLENT! I modified the recipe as suggested (I used a 30 oz can Libby's Pumpkin Pie Mix and no extra sugar or spices, and the evaporated milk.) But the title is misleading.. .they are not really "BARS." They firmed up a little after being in the fridge overnight, but still...you kinda need a fork to eat these (or be willing to lick your fingers!) If you are looking for bars - something you can eat with your hands - this is not the recipe for you.

Double-Delight Peanut Butter Cookies

This seriously won? For all the work you have to do, they are just "alright." I was not impressed. My twin daughters and I watched the Bake-off competition on the Food Network last week, and wanted to try the winning recipe. WHAT A PAIN this is! I ended up doing most of the work because I didn't want my 5 year olds touching the dough as much as you need to in the recipe. I don't even think the proportions are correct for the "inside" peanut butter mixture - I needed to add more 10x sugar to make it even workable! After all the work...I thought they tasted good....but definitely not worth all the time. I would not make it again, nor would I recommend it to a friend.

Rich Chocolate Frosting

Umm...WOW. Only need 1/2 recipe (16 servings) to generously frost a 2 layer round cake...although making the recipe in the indicated amounts would leave lots of frosting to eat!!! THIS IS CHOCOLATE FROSTING AS IT SHOULD BE!!! You will never buy a can of frosting again...

Irish Flag Frosting

This recipe should be changed to "ICING" instead of frosting. This recipe is PERFECT for this type of cookie - it spreads easily, then evens itself out to a nice, smooth finish. BUT - it does not really taste good alone. It definitely needs to be on a butter cookie!

Sugar Cookie Frosting

I was a little concerned about it at first, but this really is the BEST for sugar cookies! If you taste the frosting alone, it has that "shortening" taste; but when you put it on the cookies, it is AWESOME. Not too sweet, hardens up nicely. The best recipe I have ever made for cut-out cookies....definitely! I only used half the recipe, which was more than enough for a single batch of sugar cut-out cookies. Enjoy!

Sweet Potato Casserole I

EXCELLENT recipe! Made it for a daycare Thanksgiving lunch, and it was so delicious, I am bringing it to Thanksgiving Dinner tomorrow. I made it exactly like the recipe....perfect! If you want to cut back on sugar, though, you could definitely reduce the 1 cup a little (though I am keeping it the same.) Very easy and will get compliments!
