About this Cook
At 27 I still buy the "Healthy Choice" or the "Marie Callendar" tv dinners because I don't really cook. It's not that I don't know how to, but I never really have the time. I like to bake though. In fact, my New Years resolution is to bake more.

My cooking triumphs
I have made eggplant parmegana a couple of times and it was awesome! In fact, I took some to work for lunch one day and it was stolen from right out of the fridge! That's how delicious it was!
My cooking tragedies
Zucchini casserole. That was the most disgusting thing ever. However, that could have been just because zucchini is not very good (in my opinion).

Strawberry Vanilla Pancakes
The pancakes came out light and fluffy despite of how runny the mix was, which doesn't bother me anyway. However, I sort of made up my own recipe by making these alterations. I cut the cup of all purpose flour in half and added 1/2 cup if whole wheat flour. I also used almond extract instead of vanilla. My taste buds prefer the almond extract with strawberries over the vanilla. Waaaaay too much salt. I put in the teaspoon of salt but it was overpowering, so the next time I make these, I will cut it down by half.

Maple Glazed Pork Loin
I thought this recipe would not have been as good with vinegar, so I used my best judgement and used soy sauce instead. And the outcome? The best pork tenderloin glaze I ever tasted! I really liked the brown sugar in this too. This was both sweet and savory. It is definitely a 5 star glaze with soy sauce.

Pineapple Bake
What a delicious side dish and incredibly easy to make too! I made a pork tenderloin with it and it was a hit with my husband and two year old son. I sprinkled cinnamon all over the pineapple bake and just mixed it up in the pan. So glad I didn't use just a pinch. It gave it such a wonderful spice flavor. I used saigon cinnamon. It's sweet with a little kick.
