Creamy Pesto Shrimp

Really enjoyed this recipe. As I melted the butter, I added mushrooms. I then added 1 cup of heavy cream and 1 cup of half and half as per some recommendations. I wanted to keep some of the heavy cream. Met a nice person who makes a fabulous pesto and used his homemade pesto and this was great!!

Brown Sugar Meatloaf

My first meatloaf and it was good! I followed the recipe for about 12 and then followed many sugestions. I used a pyrex 9 X 13 and had the meatloaf sit on top of 4 pieces of bread. On the bread I sprinkled a little brown sugar and ketcup. In the meatloaf- I used 1/2 c of milk and 2 eggs. I bought Lipton onion soup but they had one for beef so I used that one and I chopped up a small onion. I also mixed in about 1 cup of Italian breadcrumbs instead of cracker crumbs. I added about 2 Tsp of minced garlic and about 2 T of ketchup within the beef. I used all other ingredients as indicated in the recipe. For the topping I then mixed togethter the 3/4c ketchup, 1/2 c brown sugar and T of Worcestershire sauce. I spread about 3/4 on top and after 40 minutes coated the top with remaining. It was a hit!!!

Banana Cream Pie I

I followed the reviews of many and thought it was yummy but wasn't sure if it was it!!! I utilized a pillsbury crust which I baked. When making the pie, I used flour and some cornstarch for I was in fear of a runny pie as per some reviews. I also used some real vanilla bean for it adds such a genuine flavor. I bought a bunch off of ebay as it is much cheaper then in the store. I also added a dash of Madagascar Vanilla Extract. The pudding came out nice and thick. I then took a small amount of pudding and mixed with bananas as it was noted this will keep bananas from turning brown. I layered this on bottom of crust and followed with the remaining pudding. I did not bake the pie and it was perfect. I placed in the fridge and had a few hours later and covered with whipped cream.

Chicken Marsala

This was divine and I followed several users suggestions so thanks!!! I used a ziplock bag for the coating which worked like a charm. For the mushrooms I used a whole pack of sliced mushrooms and a some sliced portabello. Next time I plan to try some porcini mushrooms. When cooking chicken, I added some minced garlic. I trippled the sauce. I love sauce!!! I purchased Florio Sweet Marsala from Liquer store, I heard this one rocks!!! I added a little water/cornstarch to make a bit thicker and a dash of heavy cream. I brought a plate to my mom's and when she tried she called and raved about the sauce!!! It was finger licking good. Served with buttered Pennsylvania Dutch Homestyle Egg Noodles, crescent rolls and brocolli. All was YUMMY!!!!

Honey Roasted Red Potatoes

These came out so wonderful!!! They had great color and I wish I took a photo to share. I used 8 medium sized red skin potatoes. I cut them in bite size pieces and layed them in a non stick roasting pan that was sprayed with PAM. I used 3-4 T of Onion. I also used 3 T of butter, 3-4T of honey, 3 tsp dry mustard and some extra salt and pepper. I did have them in the over for about 50 - 60 minutes. I kept them covered in foil for the first 20-30 minutes. I stirred about every 15 minutes. They were browning on side down, so you want to be sure to flip so the color is more evenly coated and so you do not burn. If I had time I would have followed others advise of sticking them under broiler for a few minutes. They were quite yummy. Everyone asked what was on the potatoes?

Maryland Crab Cakes II

I finally can make the type of crab cakes I love so much. Having been spoiled with Maryland style crab cakes when I lived in PA, I have ordered these several times in NY and NJ and rarely have crab cakes in this style. As from other reviewers, I made some changes. I used 1 lb of fresh crab meat which would result in about 5 dinner size cakes. I used Old Bay instead of Hot Sauce. I used cornflake crumbs instead of bread crumbs. I let sit in fridge for about 30-45 minutes to firm. I put it on rack 2nd from top in broiler. They came out fabulous. I believe I put 2 T of Mayo and at some point might try with homemade mayo as I have been told that it would make a great difference. I served with a RĂ©moulade sauce bought in seafood department.

Almond-Crusted Halibut Crystal Symphony

I had to try this recipe with raving reviews. I also used Tilipia given cost and availability. I doubled the sauce which we finished it up for 4 adults. Everyone loved the fish and especially sauce. Next time I might try with light cream. When I doubled the recipe I only used 11 T of butter. This came out fabulously. It made fish yummy. My little ones ate the fish without trying the sauce and gobbled it up! Thanks for sharing and all the wonderful reviews.

Garlic Prime Rib

I too followed this recipe. I increased it a little to rub all over the 3 open sides. Prior to the rub, I injected it with Braswell's Merlot Wine Sauce found in supermarket and a few garlic cloves. Trust me this did not taste garlicy. Everyone loved the meal! My dad said it was the meal of the century. When he thought about that statement logically - he chuckled. Needless to say, this easy recipe made it so easy. And the Merlot Sauce gave it such a nice flavor that no one really needed the Au Jus I made - although that was a store packet. We all felt the meat was too good on its own. Thanks for sharing the recipe and the comments.
