Vegan Chocolate Cake

Absolutely a perfect chocolate cake recipe - no changes necessary! I generally make this into cupcakes (I take all my baking into work, cupcakes are easier!). This is my standby chocolate cake and it's great since I always have all these ingredients on hand. Thanks for sharing!

Fried Cornmeal Mush

I've never had fried mush before so I don't have a clue how it is supposed to cook or taste, but my turned out like the picture so I think I did alright! I'm very happy with it, it's on my regular list now! I had it with veggie sausages and gravy for dinner and am looking forward to having it with breakfast tomorrow. So Mush novice says 5 stars!

Cranberry Apple Muffins

Made these muffins for some friends who were coming to visit and they were a huge hit! I omitted the coriander and coarsely chopped pecans were my nut of choice. Definitely reduce the cooking time, 20 minutes produced perfectly browned and moist muffins. I didn't have any paper liners so just lightly greased the tins and the muffins came right out, no problems. This will become a regular in our house!

Oranged Cranberry Sauce

I was looking for an orangey cranberry sauce for my thanksgiving this recipe was perfect! I don't know how long I cooked it since I just let it simmer on low while I did other things and gave it a stir when I walked through the kitchen, probably about 2 hours overall before I decided that the consistency was right. It thickens a bit more when it cools as well, so it was perfect, not runny at all on the plate. Forgot to add the cinnamon sticks so stirred in a bit of ground cinnamon at the end. It was a hit!

Ginger Veggie Stir-Fry

I really enjoyed this dish! I used what veggies I had on hand and doubled the sauce since I like my stir-frys saucy. I didn't toss the veggies in the cornstarch mix beforehand, worried that it might make it gummy. Instead I just let the vegetables cook in my wok until almost ready and then added the sauce all at once and let it simmer until ready. Very happy with the sauce recipe, will use it again as a base for other variations!
