Pecan Pie V

I love that this doesn't need corn syrup. The flavor is fantastic! Not too sweet... it's just right. I've made with and without chocolate chips, and it's great both ways. This is my go-to pecan pie recipe - I love it.

Boston Cream Pie Minis

I made these for a Boston themed Super Bowl party... they were a HUGE hit!!! They were super cute - everyone initially thought they were purchased from a bakery. I used the mini cupcake pan and baked for 10 minutes (perfect time). I overfilled the cups a little, so they baked up over the top. To fix, I flipped the cupcakes upside down and put a generous amount of chocolate what is normally the bottom - so that the final product wouldn't be top heavy and fall over. It turned out fine, but if you want a normal size - don't fill batter more than 3/4 of the cup. Also, in the future I'll double the filling and chocolate... as - at least with my measurements - I only had enough to do half of the mini cupcakes. Still - the finished product was fantastic. I'm going to try them again tonight with red velvet instead of yellow cake mix, for Valentines. :-D Hope it turns out as good!

Super-Delicious Zuppa Toscana

Great soup!! Admission: I did change it up a bit. I thought I had spinach... apparently I used it all up last night. Once I realized it - the soup was already half way done... so I threw in carrots and celery about 10 minutes after the potatoes went in. Also, I didn't have heavy cream, so I used half and half. It worked great. The beauty of this soup is that it's flexible. The flavor was outstanding - and I'm pretty sure it'd taste great, no matter what veggies you had on hand.

Wagon Train Pasta

Great basic recipe to build on! The result was a tasty and quick kid-friendly dinner. I didn't have any spaghetti sauce on hand, but did add a can of Del Monte Zesty Chili Style Diced Tomatoes. I also added cumin, smoked paprika, added extra chopped garlic, onion, a little frozen corn and a can of kidney beans. I sauteed the onion and garlic in the pan before I added the meat mixture. Instead of mozzarella, I topped with a Mexican cheese mix. The dish has pretty mild seasoning - which was great for the little ones... my husband and I just added a little extra to ours at the table, which was fine.

Kathy's Delicious Whole Slow Cooker Chicken

Wow - this really turned out well! The chicken literally fell off the bone... as in - I couldn't get it out of the pot. But the flavor was fabulous. I used a 4 pound chicken and doubled the liquid (everything else in the recipe), and cooked for 8-9 hrs on low. I left out sesame oil because I didn't have any on hand. I minced about 20 pods of garlic to equal 4 tbsp. I made a chicken broth using Better than Bullion concentrate - and heated all the liquids together on the stove before pouring over the chicken. SO EASY - and the result was fabulous.

Pumpkin Cake III

Wow - this turned out perfectly! I followed the directions as written, and it's delicious and moist. To look like the picture, I did it in a bunt pan for additional time (50 min total?), and topped with cream cheese frosting and orange/green/yellow sprinkles. A huge hit!

Grandma's Green Bean Casserole

I make this every year for the holidays. My husband used to turn his nose up at green bean casseroles because of the canned soup flavor... so finding a non-canned soup version was fantastic. -and it tastes better! He is a green bean casserole-loving convert - and I get my holiday food staple. Win win! I agree with other posters... saute the onion in the butter before adding flour, etc. and cut down a little on cheese - and mix most of it in.

Broiled Tilapia Parmesan

Oh yay! I was sooo sick of tilapia, and had been avoiding the last two fillets in my freezer for - a while. I just couldn't stomach another bland flaky fish with lemon wedge... and this recipe saved me. I sprinkled a little Old Bay on the fish before going in to the broiler... and added paprika, salt vs. celery salt (because I was out), a little flake red pepper, and some old crusty bread crumbs. No measuring - I just eye-balled it, and it turned out awesome.

Cream Cheese Frosting II

EASY - and has a great flavor. ...not too sweet - I agree that this is definitely the frosting for folks who like the cream cheese flavor. I used this twice now on pumpkin cakes... the outcome is delicious, and I always get extra comments on the frosting.

Golden Sweet Cornbread

I am really impressed!! I've had a LOT of cornbread in my life, and this is definitely one I'd consider a winner. ...good texture, not too sweet and cakey but GREAT flavor, good texture, it rose beautifully, and was MOIST. I modified things ever so slightly... adding just a tad extra oil, and a tiny bit extra salt (about 1/2 tbsp. vs 1 tsp.). At 400 degrees F, it took about 30 minutes to be done... and WOW - the bread was really fabulous.
