I am really impressed!! I've had a LOT of cornbread in my life, and this is definitely one I'd consider a winner. ...good texture, not too sweet and cakey but GREAT flavor, good texture, it rose beautifully, and was MOIST. I modified things ever so slightly... adding just a tad extra oil, and a tiny bit extra salt (about 1/2 tbsp. vs 1 tsp.). At 400 degrees F, it took about 30 minutes to be done... and WOW - the bread was really fabulous.
