Baked Buffalo Wings

These wings were a hit at my Superbowl Party. I used Sweet Baby Ray's Wing Sauce and Glaze in the Sriracha variety. I also added a tablespooon of molasses.

Easy Pancakes

I am not a fan of recipes with a long list of ingredients. That is why I chose this one for our pancake breakfast. Be careful reading the recipe. I see a lot of people stating they reduced the baking powder from 2 tablespoons to 2 teaspoons. The recipe specifically states "2 teaspoons baking powder", which is adequate. I do agree in cutting back on the salt. I used only a pinch, and these pancakes are very easy. They came out fluffy and tasty!

Vegan Portobello Stroganoff

This is/was a delicious Sunday Dinner today. I used what ingredients were available at my home, so substitutions were made. Instead of 8 ounces vegan sour cream, I used 3/4 container of Daiya Plain Cream Cheese Style Spread. Instead of 2 teaspoons vegan no-beef bouillon, I used 2 tablespoons of soy sauce. Instead of 1 tablespoon balsamic vinegar, I used 1 tablespoon cider vinegar. I used the preparation method that hw3023 suggested in which that I threw the mushrooms and onion into a deep skillet with the marinade sauce. I sauteed that until it is soft, about 5 minutes, then I add the sour cream sauce and toss for 1-2 minutes like it says. Then I toss in pasta. This is an easy, delicious comforting dinner.

Flourless Chocolate Cake II

Tasty! I omitted the 1/2 cup of cocoa powder, and added an additional 4 oz. of semi-sweet chocolate. I would recommend using an electric mixer to mix the ingredients to get a uniform consistency in this cake. I whisked and whisked and even in the bowl, it did not look like it was coming together. I poured the batter in a cake pan without using the electric mixer. The end results came out with areas of the dessert where you can see "sections" of cooked egg. It did taste fine. We ate it no problem, but visually seeing those gelatinous sections of cooked egg may turn some people off.

Cod au Gratin

Fish as a comfort food? YES!!! I did take the advice of MERLIN3370 by adding 1/4 tsp. black pepper, 1/4 tsp. garlic, 1/4 tsp. dry mustard and 1/2 tsp. salt. This was very tasty and will make it again.

I eat a Vegetarian diet. I substituted the bacon with 1/2 tsp of Liquid Smoke and 2 tablespoons of olive oil. This recipe came out delicious!

Vegan Pancakes

These Pancakes are delicious! I used whole wheat flour and soy milk for the liquid. Nutritionally, this makes a complete protein amongst other benefits such as increased fiber and calcium. I made the pancakes individually in a small skillet and placed the already made ones on a plate in a 170 degree F oven.

Best Marinara Sauce Yet

I use this recipe every time I make pasta. I prefer to forgo the food processor and use a 28oz can of diced tomatoes just because I like a chunky sauce. I add a pinch of red pepper flakes when sauteing the onions for a little heat. The white wine makes such a difference! If you prepare the sauce first, then while it is simmering start heating the pasta water and by the time you finish cooking the pasta according to directions, it is done. This recipe is very easy to follow. The taste and cost effectiveness will get you off jarred sauce for good.
