Mocha Chocolate Chip Banana Muffins

Just made a batch of these, followed the recipe exactly (I always do that the first time) and they are very good. I will reduce the sugar, and increase the coffee next time, but they are great as is.

Cranberry Applesauce Muffins

We've tried this recipe twice now and just can't make it work. The dough is too dry, so I added more applesauce but they still end up very dense and dry. We used frozen blueberries the first time and dried cranberries the second time. Each time we used sweetened applesauce so eliminated the sugar. They were sweet enough but just too dense. Not a nice texture.

Banana Oatmeal Cookies III

Made these this afternoon and everyone loved them. I read the other reviews first and made some minor tweaks, too. Substituted some apple sauce for some of the butter, and half as much sugar but used brown sugar. Left out the nuts so the kids could take them to their nut-free school for snacks. Finally, also cut the baking time down to about 10 minutes. They came out crispy on the outside but nice and soft in the middle, like mini muffin tops. They were great! Will definitely make this recipe again.

Holiday Mincemeat Muffins

Love this recipe! So easy and yummy. I left out the sugar and used apple juice instead of apple cider and everyone still loved them. Will make every holiday season! I also got 24 medium sized muffins.

Peanut Butter Banana Smoothie

Super yummy. The kids won't eat/drink fruit smoothies so I thought this might please them and I was right. I only used one (large) banana and we still found it a little too thick, so next time I will only use one cup of ice. The kids also want to add cinnamon next time so we'll try that. I used unsweetened soy milk and think, like LatinaCook, I'll try it with almond butter as well. Very versatile recipe!

Penne with Garlicky Broccolini

Just made this for the first time tonight and we loved it. Read the other reviews about it being dry but it's not supposed to have a sauce. Only change I made was to add scallops. Will definitely be making this again. My picky kids actually asked me to!

Pork Normandy

This was a great recipe that everyone enjoyed. I had a bottle of Granny Smith Apple Cider that I wanted to use in a recipe and this was perfect for it. I made it entirely stovetop and cut the pork into cubes but otherwise followed the recipe and it was great. Served it with mashed potatoes and steamed veg.

Salmon and Rice Balls

Pretty good recipe. I decided to skip the sauce; made smaller balls; rolled them in cornflake crumbs and baked them. Also used brown rice instead and some finely chopped fresh tomato. Good fish recipe.

Easy Chickpea Curry

Fabulous recipe. I adjusted the spices for our tastes, used chopped fresh cauliflower instead of potatoes, left out the milk, sour cream and almonds. Served with naan bread. Everyone loved it.

Vegetarian Cassoulet

Loved this - my kids even ate it! Going to be making it a lot this Winter. Had to make a few adjustments out of necessity - stove-top rather than slow cooker. Dried herbs rather than fresh. Veggie broth rather than mushroom. It still rocked!

Sweet Potato Enchiladas

Crazy easy, delicious recipe! My picky kids loved it - didn't even realize they were eating sweet potatoes. This is going to become a "regular" recipe in our household. Only changes I made were to make my own enchilada sauce and to use whole wheat flour tortillas so no frying. Even easier and healthier.

Shrimp Tetrazzini

Fabulous. I substituted salmon filets for the shrimp, baked them right on top and it was wonderful. Left out the salt for health reasons, didn't miss it at all. Added frozen peas when making the sauce. Might try it with broccoli next time. It's a keeper!

Roasted Italian Herb Chicken

Thanks so much for this recipe! It's easy and delicious and the whole family enjoys it. The first time I made it by the book, but read other reviews and reduced the dressing to one cup. It was superb. Now I get creative. I've made it the "lazy" way - frozen chicken and just added the dressing and crumbs over it in the dish and bake, adjusting the cooking time. Lazy, easy and yummy! I've tried different dressings too, it's always good.

Easy Alfredo Sauce I

OMG! This was so good - my kids gobbled it up which is a feat! I added bacon, peas and fresh sliced mushrooms to make a carbonara over spinach fettucine. Might try adding garlic next time - I'm up for experimenting with this recipe, it's so easy.

Curry Lamb Chops

I loved this recipe. I didn't have any orange zest so I left that out. I found the texture nice - the meat practically fell off the bones. I served it with some homemade veggie curry and store-bought naan bread. Delish.
