Italian Anise Toast

Yorkshire Pudding II

I didn't have enough drippings from my meat, so I used 1/2 butter and 1/2 coconut oil to make up the difference. Then I saw how much grease was in my skillet and dumped out 1/2 of it to be used in gravy. My whole family loved it! I pre-heated my cast iron skillet with the oil before I poured in the batter, and had to cut the bake time by 10 minuted.

Pineapple Kugel

This was really good. I used whole wheat egg noodles, 1/3 C. Agave nectar, and a little cornstarch to offset the extra moisture. I didn't expect much, but loved it!

Plum Blueberry Upside Down Cake

Oh...My...Goodness! This was divine! The only changes I made were whole wheat pastry flour, butter, and sucanat instead of white and brown sugar (I'm in love with sucanat - it's healthy AND tastes wonderful). So, so good.

Stuffed Strawberries

Easy and delicious! I could've easily filled 2 pints of strawberries quite generously. I used the extra filling in raspberries, and that was really tasty and cute.

Appetizer Stuffed Mushrooms

I used plain bread crumbs instead of a slice of bread, and a small sprinkle of water, and baked them with the Parmesan plus Cheddar cheese, and they were WONDERFUL. Thanks a ton.

Mango Madness Salad

Incredible! I was a bit afraid of the cilantro in it, but it MADE the salad! I had it plain, then on buttered toast (yummmm), and the next day I cooked it with a little cornstarch and orange pineapple juice to make a compote and had THAT over toast. DELICIOUS!!! Even my hubby loved it, and he doesn't like healthy food. ;)
