Easy OREO Truffles

My whole family ADORES these. I really, really reccommend using white chocolate candy coating instead of the semi-sweet chocolate, however...it really makes the difference between a 4- and 5-star recipe.

Angel's Yummy Bruschetta

Omitted onions and only used about 3 oz of skim mozzarella, and then stirred in about 1/2 tbs of olive oil. So easy and yummy!! A new staple recipe for my household.

Tender Barbecued Chicken

Awesome recipe!! I didn't have any lemons, so I added about a quarter cup of lemon juice, and I substituted Diet Coke for regular. My boyfriend said it was a little bland at the end, but after I added a bit of Cajun seasoning, he said it was absolutely perfect!

Lemon Blueberry Drop Scones

Made this recipe sooo many times with many different variations, and I have to say...the orignal is my favorite!! I can never find Lemon NONFAT Yogurt, so I always use vanilla and then add in 2 tsp lemon extract, and also sub the extract anytime the recipe calls for zest. The glaze is key, it really really makes the difference, and you don't need alot of it! Also, frozen blueberries do make the batter slliiightly blue, but it's more of a tie-dye effect than anything, and is actually very visually interesting! :0)

Brooke's Best Bombshell Brownies

These things are AMAZING. I made them super healthy, they ended up being 60 calories for 1/24 of the pan, and they were STILL so delicious, moist and rich!! I subbed half of the butter with Brummel & Brown spread, the other half with unsweetened applesauce; used EggBeaters for all 4 eggs; and lastly I completely omitted the chocolate chips. NEW FAVORITE RECIPE!!

Banana Banana Bread

Not sweet at all, which if that's what you're looking for, perfect. Love the uber-banana-ness of it though! Went over very well with my boyfriend and my stepdad, who both like really hearty, filling, no frills kind of food. Overall, pretty yummy!

These are really good for the short amount of time they take and how easy they are to prepare! Relatively low calorie also, even without any substitutions. Just the perfect hint of lemon I was looking for, thanks for this recipe!!

Blonde Brownies I

I thought they were pretty bland, and I had even increased the chocolate chips and added walnuts as well. Not as good as I was hoping, though they stayed very moist when I kept them in the pan, covered with saran wrap.

Bake Sale Lemon Bars

I decreased the over temp to about 325, which is especially important if you don't want a super crispy crust, since it is pretty thin. I've made these twice, but both times I've doubled the amount of filling and decreased the amount of sugar. However, I think it's a pretty good base lemon bar recipe, and it's very easy to tweak. Seems like everyone prefers their lemon bars just a little bit different than the next person! :0)

Soft Oatmeal Cookies

I think I really needed to used quick cooking oats rather than just regular rolled oats...but either way, my cookies still turned out delicious! Very easy recipe, very chewy, and not too sweet like alot of other recipes out there. Just watch out with the stickiness of the dough, definitely don't try rolling it into balls, just try sculpting balls with a fork and spoon on your cookie sheet. I'm thinking next time I'll throw in some butterscotch chips instead of the usual raisin/nut combo. Overall one of the better oatmeal raisin cookie recipes I've come across!

Holiday Chicken Salad

Well, I didn't follow it as directed, but it gave me such a fresh take on the chicken salad, I have to give it five stars! I substituted the mayonnaise for a little less than 1 cup of nonfat plain yogurt. Used orange flavored Craisins instead of regular dried cranberries, omitted paprika, onions, bell pepper and pecans, and added 1 cup chopped granny smith apples and 2/3 cup chopped walnuts. Next time I'll probably add even more apples, since they really add a wonderful zingy crunch. Loved the fruity chicken salad idea, and love this recipe!

Peanut Butter Cake II

I made this cake for my boyfriend's birthday, he's a massive PB lover, and he adored it, he ate the whole thing by himself over the course of a week! It's a very dense cake, and I baked it ina 9x13 pan as one layer, and it worked very well. I didn't use the suggested frosting, instead I just used store bought (I know, bad!) chocolate frosting, but then I crunched up a ton of Nutter Butters, and pressed the crumbles on all the frosting to give it a nice crunch and aesthetic appeal. I posted pictures of the final product, if anyone wants to see what I'm talking about. I definitely recommend this recipe, based on my boyfriend's response!!

Delicious Raspberry Oatmeal Cookie Bars

Fabulous!! I work at Starbucks, and I've been looking for a recipe for our Organic Blueberry Oat Bar, and this is the closest I've come!! I used Smucker's Sugar Free Strawberry Preserves (10 cal/tbsp instead of 45 cal/tbsp!) and Brummel & Brown imitation butter instead...tasted WONDERFUL and cut the calories per serving from 219 to 146! I've already got my second batch in the oven, thank you!!
