Grilled Salmon I

Easy and delicious. We've been making this marinade for years. Sometimes I add ginger, too. Great brunch item - impress your guests with a meaty, caramelized filet. Toss some lemons on the grill at the end to serve with with it. Even those who don't care for salmon will eat this up! Guests will think you are a gourmet chef!

Banana Muffins II

Great use of leftover bananas. Next time you have a brown banana hanging around, toss it in the freezer in a ziplock bag. After a few weeks, you should have enough to whip up a batch or two of these easy and delicious muffins - all the ingredients already on hand. I use a potato masher to smash my bananas up well. Toss in some mini-chocolate chips, too. Not too many, just enough to add a little richness. Everyone loves these!

Slow Cooker Lasagna

Overall, good recipe where you can be liberal and creative with ingredients and still have a good dish. I doubled the meat & sauce and added more “Italian spices” than it called for. I doubled the amount of mozzarella and added eggs and parsley to ricotta (not cottage) cheese, too. Also note that when you are layering the noodles, you need to make sure they are well submersed in the meat sauce and then they cook up just fine (not mushy and not hard). It was tasty; good for camping or a pot-luck when you wouldn’t expect lasagna. This recipe doesn’t save any time though– it just makes lasagna more “mobile”. Also, it doesn’t look as pretty as a pan baked lasagna when serving. Oh, and use a crock-pot liner for this one and make cleanup a snap!

Grandma Gudgel's Black Bottom Cupcakes

The husband is a huge fan of these cupcakes and we always buy them. I decided to make them because the recipe looked surprisingly easy...and it was! Great amount of cream cheese mixture per cupcake and cake part is moist. Next time will cut chocolate chips down to half a cup and/or go with the mini size as others suggest. One whole cup of regular size chips sligtly over-powered the cupcake.

Reuben Dip

Was really excited to try this recipe based on other reviews. It wasn't a big hit, though. Had lots left over and yes, group was "reuben lovers." I followed recipe to a T, but it just seemed to lack something - was kind of bland.

Cheesy Ham and Hash Brown Casserole

We have had better cheesy potato casserole's for brunch; however, I will consider adding ham to them now that I've had this one. I did add crushed corn flakes to the top of the casserole before baking for a little crunch.

Mouse's Macaroni and Cheese

Amazing mac and cheese! I used shells to "fancy it up" and they worked really well at capturing the creamy cheese! Also, I used the mixed cheese ends from the deli counter (lower price). It was mostly White American, but the few other kinds mixed in there didn't hurt at all.

Apple Pie by Grandma Ople

Easy and delicious - followed other tips and added cinnamon, a little nutmeg and substituted 1 tbsp of water for 1 tbsp of vanilla. I have since used this sugar/butter mixture to candy pecans and cashews for a yummy snack that gets the whole house in the "sweater weather" mood!

Stuffed Green Peppers I

This is an easy-to-follow recipe that takes no time at all to make. A great way to add green peppers to the dinner mix, especially when you have a garden. Experiment with this one - practically any meat or sseasons or even instant rice will work. They freeze very well, too, so make a big pot and you'll have quick, individual meals ready to go.

Buffalo Chicken Dip

Use 1 pound of cooked chicken in place of the canned - you will not be disappointed! Also, I like to put 1/2 cup of ranch and 1/2 cup of bleu cheese dressing in this dish and it just takes it up a notch. Try a spicier than usual hot sauce, too! I don't know why but a little extra heat seems to make the dip that much more addictive. Serve it with Fritos. Great party food!

Antipasto Salad

Very good salad - different and great for a low carb diet! I recommend adding pepperoni...and I also added pepperchini's and roasted red peppers. Everyone loved this and it's endearingly known as "hoagie salad" in my family now. If taking to a party, pack extra lettuce separately to add as salad disappears, it's definitely part of the dish. Dressing is tasty and would make an excellent sub spread (of sorts) on its own. Update: My sister made this for the holiday recently and instead of layering the lettuce on the bottom, she cut it up and mixed it in with the salad mixture and served the salad with bread to scoop. Delicious! Only thing to consider is that the lettuce doesn't keep long; not that we ever have leftovers!

Pork Chop and Cabbage Casserole

Delicious. I cover the dish for most of the cooking, only removing the foil to brown the chops at the very end. This keeps them moist. The whole family likes this one!

Chicken Pot Pie IX

Found this recipe years ago and now everyone in my family makes it! We use 1 box of frozen mixed peas and carrots and that seems to measure up just fine. Sometimes I'll add cooked, cubed potatoes, too. This is great with left-over turkey, too - becoming a "Black Friday" tradition. I'll also use beef broth and left-overs from a roast for a beef pie.
