Peanut Butter French Toast
Interesting idea, but it did not work out. Kids took a bite and walked away. Just not a whole lot of peanut butter taste going on. I agree that warming the peanut butter helps smooth the batter, though. If I take anything away from this recipe, it will be to use the peanut butter, milk, vanilla and sugar mixture as a sauce for standard french toast. This spread (without the eggs) is actually very creamy and tasty. With a little honey drizzled on top - now that would be a hit with the kids!

Grilled Salmon I
Easy and delicious. We've been making this marinade for years. Sometimes I add ginger, too. Great brunch item - impress your guests with a meaty, caramelized filet. Toss some lemons on the grill at the end to serve with with it. Even those who don't care for salmon will eat this up! Guests will think you are a gourmet chef!

Banana Muffins II
Great use of leftover bananas. Next time you have a brown banana hanging around, toss it in the freezer in a ziplock bag. After a few weeks, you should have enough to whip up a batch or two of these easy and delicious muffins - all the ingredients already on hand. I use a potato masher to smash my bananas up well. Toss in some mini-chocolate chips, too. Not too many, just enough to add a little richness. Everyone loves these!
