Tomato and Bacon Jam

YU-MMY! I used a white onion (blanched in salt water to cut the acidity) because that's what I had on hand, and only added 3/4 c. of sugar like another reviewer suggested and it came out great. I will try using a bit less sugar next time. Good stuff :)

Balela Salad

This is fantastic! I used less mint than was called for (only because I didn't have enough), did an extra tblsp of lemon juice and used a serrano pepper instead of a jalapeƱo because I like the flavor of serranos better. I think next time I will add another serrano but overall this is a great dish, fast, easy, and delicious.

Tomato Cucumber Salad with Mint

I agree with others who said that there was too much mint, so I also used less than was called for. This is definitely an interesting salad. I loved it, it was so refreshing although fresh mint is not a taste I am accustomed to.

Authentic German Potato Salad

So delicious!!! I've never had German potato salad before, nor made it, but this was so easy and delicious, and my boyfriend loved it too! I will definitely be making this again soon.

Roasted Portobello Mushrooms with Blue Cheese

I'm rating this recipe a neutral three, because I don't feel I can give a fair assessment. I just want to note one thing, though: if you are going to try this recipe you should make sure you like blue cheese first! I tried this out because it really sounded good to me, but when it came down to eating it, neither my boyfriend nor I liked it at all. The combination of the mushroom and the blue cheese flavors was just too overpowering (the earthy, fungus flavor). I thought I would like it because I like blue cheese dressing and, you know, the dip for hot wings, but this was a waaaaay different flavor than those. I'm not sure if it was the cheese I bought or what (used Boar's Head) but I will not be trying this again.
