Mom's Zucchini Bread

Great and super simple recipe! My modifications: instead of 3 teaspoons cinnamon, I put in 2, then 1 tsp pumpkin pie spice (to get in a bit of everything), then a quarter tsp each of ground ginger, allspice, ground nutmeg, and ground cloves. SO amazing. I also sub all the oil with applesauce and it works great! Could probably do with a less sugar, but I think I will try half brown sugar next time.

Apple Strudel Muffins

Amazing. I took others' advice and added more apple and grated it. I used honeycrisps - they were super moist which added great flavor to the recipe. I added generous amounts (1 tsp +) of: cinnamon, apple pie spice, ground cloves, allspice, and ground ginger. The more flavor the better :) I also added a tsp. more vanilla. SO GOOD!

Oatmeal Crispies

This recipe is great, especially for around the holidays. I used a half cup of butter and a half cup of shortening, and original oatmeal instead of the instant kind. I also added more spices, like pumpkin pie spice, a little ginger, a lot more cinnamon (probably close to 1 1/2 tsp.), and of course the nutmeg. I also sprinkled baker's sugar on the top to dress them up. Definitely give this one a try!

Deep Dish Brownies

A definite crowd-pleaser. I doubled it and used 5 eggs instead of 6, and special dark chocolate cocoa. I also added one cup each semi-sweet chocolate chips, milk chocolate chips, and peanut butter chips. I bake a lot for my co-workers (in an office of 60) and these were raved about!

Outrageous Chocolate Chip Cookies

Great recipe. I modified it by adding a package of french vanilla instant pudding, 1/2 cup cocoa powder in place of 1/2 a cup of flour, about 1 tbsp of light corn syrup, and slightly more brown sugar and sugar to offset the cocoa powder's bitterness. Sooo good!

Eggless Chocolate Peanut Butter Cookies

Pretty awesome for not having eggs! I used half and half instead of milk and added about a cup and a half of peanut butter chips. I'd be a little more liberal on the vanilla - go ahead and add in double.

Honey Oat Beer Bread

I really like this recipe. I use 2 tablespoons of brown sugar and at least 2 tablespoons of honey as well. Also, I've tried it with both Sprite and Dr. Pepper instead of beer and results are sooooo delicious!!! You should definitely try it with other carbonated drinks to see what you like best.
