Chicken Cordon Bleu II

Oh, this was tasty! I made this on the spur of the moment, and had neither ham nor Swiss cheese....but I did have some prosciutto and fontina, and the results were wonderful. Next time I will make it exactly as written, and I am sure it will be just as good. Thank you, Behr!

Easter Meat Pie

This comes very close to the pizzagena of my memories!I did leave off the top crust, as that is the way we always had it. Yes, it IS salty, but what better excuse to enjoy an icy cold glass of Prosecco? Delicious!

Chicken Valdostano

Very nice dish. I also used 1/2 butter & 1/2 olive oil, because to get the chicken nicely browned, you've got to get that heat up high. I did cook it about 4 minutes per side. It bothered me not to salt & pepper the chicken, but I'm glad I held off, because the Prosciutto and cheese provided plenty of saltiness. I served this with rice and broccoli, and my family loved it!

Mom's Favorite Baked Mac and Cheese

This was very good! I doubled the recipe but kept the same amount of flour, as one reviewer did. And I am very glad I took another reviewer's suggestion to add more macaroni....I used two full boxes of medium shells, and I may have been able to use more. The sauce was very smooth and creamy, and everyone enjoyed it. My only addition was crushed, buttered Ritz crackers, which I believe not only added to the presentation but also kept the top from drying out. Thanks for a very good mac & cheese!

Delicious! Like other reviewers, I brushed the butter/oil mixture on, and only on one side. The only other thing I did differently is that I smashed the garlic cloves and removed them after the butter melted. That way we got the essence of the garlic without it being too overpowering. Simple & yummy!

Summer Corn Salad with Asparagus

This was great! I doubled everything, and added an extra tablespoon each of olive oil and balsamic vinegar, based on other reviews. Everyone loved it. I think it would be great as well if the basil were swapped out with any other favorite herb. Thanks for a new addition to our summer repertoire!

Slow Cooker Ham

It's probably not fair of me to give this only three stars....the taste was very good, but the ham was a bit rubbery. I believe it was because it was in the crock way too long; I did follow others' suggestions about a boneless, spiral ham and planned on doing it on low for about four hours (I had a 9# ham). The problem was, two of our guests were over an hour late, and it threw us all off. I should have shut the crock pot off when they arrived and didn't. The ham would have stayed plenty warm. My bad! I think it would've been much better had I done that, and I am only reviewing now to warn others off of my mistake! I plan on trying this again next time we have a party, and hope to update with the stars this cooking method deserves.

Rosemary Ranch Chicken Kabobs

This was wonderful. Have to admit that I myself have not prepared this dish yet, but it was served to us by my sister-in-law last week. When she told me the name of the recipe I thought hmmmm....that sounds familiar....maybe because I had saved it to my own recipe box a few weeks back! Thanks for a different and delicious departure from "same old chicken"!

Roasted Sweet Potato Corn Chowder

We love this soup! Have been meaning to review it for a couple of years now. To save time, I will usually roast the sweet potatoes either earlier in the day, or the night before. Then it's a snap to put together. A very satisfying, healthy dish. Thank you, Mellie!

Pork Tenderloin Diane

We love Steak Diane....so when I saw this recipe my antennae went right up! Problem was, we already had some leftover grilled pork that I was afraid would dry out. So I just made this sauce, sliced up my pork very thinly, and tossed it around for a few minutes. The result was terrific! Like some of the other reviewers, I am an "eyeball" type cook, and I think I did add a tich too much Dijon. Only reason I didn't give 5 stars is because I didn't follow to the letter. Next time "eye'll" try to be more exact!

Oven Roasted Parmesan Potatoes

Fantastic! I did sub onion powder for the garlic powder as we have a garlic hater in the family. Other than that, followed recipe exactly and those potatoes were just as promised: crispy on the outside, moist & flavorful on the inside. Thanks, Bellepepper, for what is sure to become a "regular" at our house!

Pork Roast with Thyme

This was delicious! Of course, didn't have the cider vinegar - subbed balsamico - and took other reader's suggestion about adding the broth. I had two 2lb roasts and the total time was about 1 hr 15 mins. I have a slow oven so I bumped up the temp to 375. After I took the meat out, I scraped all the drippings into a pan & used it for a gravy base. Yum!

Quick and Easy Grilled Potatoes

These were terrific. I had marinaded some sirloin tips and right before they went on the grill I realized I hadn't even thought of a side dish. Fortunately I had seen this recipe earlier today and not only did it save the meal, those spuds were dang good! Next time I may try to ramp up the flavor a bit, but they were very tasty with just the oil, salt & pepper. Thanks for a very easy & delicious recipe.

Garlic Chicken

This chicken was so moist! On some of the breasts, I omitted the garlic as we have a "garlic hater" in the family, and they were still great with only olive oil and breadcrumbs. Thanks for a very simple and tasy recipe.
