Peanut Blossoms II

Awesome cookies! Made these following the recipe exactly and baked for 11 minutes. I think my cookies were a little bigger than the recipe called for because I ended up with about 70 cookies..but I wouldn't change a thing because the size was perfect. Once cooled, they were still nice and chewy and tasted wonderful. Not too sweet with a good amount of peanut butter flavor. Took some to work and they were devoured! Thank you Rosemarie for a great recipe!

Slow-Cooker Chicken Tortilla Soup

Loved this soup! Everyone including the hubby who is the pickiest eater in the family had seconds. I followed the recipe almost exactly....used two cans of enchilada sauce and omitted the can of tomatoes. Also, I put raw chicken right into the slow cooker along with everything else and cooked on high for four hours...the chicken was so tender and shredded easily. Oh, and I also used a large can of hominy instead of frozen corn. This recipe will be making repeat appearances at my house!

Firecracker Grilled Alaska Salmon

Made this yesterday and followed the recipe almost exactly (didn't have green onions so I used cilantro instead). I made enough for leftovers but there weren't any! Even my eight year old daughter who is the pickiest eater on the face of the earth asked for seconds and said it was the best fish she ever had. The marinade gives the salmon just enough kick without being too spicy. There was a lot of marinade left so I heated it on the stove with a little bit of cornstarch to make a sauce for the family loved that too! Thanks Christine for a great recipe!

Microwave Oven Peanut Brittle

Wow! This is the best peanut brittle that I have ever had! I was skeptical at first about making it in the microwave but I followed the recipe almost exactly (I added two tablespoons of butter for more buttery flavor)and cooled it on parchement paper for easy cleanup. From start to finish, it took only minutes to make and my family devoured it! I did take it out of the microwave once during cooking to stir so that the sugar melted evenly. This recipe is a keeper...I'm planning on making more to give as Christmas gifts!
