I'm a married mom of one beautiful 2 year old boy. Love to cook; Seriously thought of going to school for it but things didn't pan out that way.. I like to try new things and am willing to eat just about anything new.
My favorite things to cook
Chicken, pastas, lasagna, ziti, brownies, cupcakes, meatloaf, roasts, ham, chops, deep fryed.. anything just about, copy cat restaurant recipes
My favorite family cooking traditions
It's actually kind of funny, but I never cared for my mothers cooking, or my grandmother's. I developed a taste for it on my own, tried different recipes out of old recipe books my father collected or that I got from book sales. Ofcourse not everything came out good, not always because I messed up the recipe, but not everything is my taste. When I was dating my husband the first meal I made for him was my meat lasagna. He loved it!
My cooking triumphs
Last THankgiving, (2007) was my first thanksgiving to cook all by myself.. needless to say, while most first thanksgivings are less than perfect.. mine couldnt have been more perfect.. all the dishes came out fantastic.. the turkey came out moist.. just bird perfection. The only draw back was when my sister in law turned a lidless container of coolwhip upside down and it went everywhere! LOL
My cooking tragedies
Me and polenta = disaster! I tried a minestrone soup recipe and it was awful.. awful

Mini Cheesecakes III
very creamy... used alluminum cupcake holders and had to adjust cooking time, but they came out wonderful.. Thanks!!!

Carne Con Papas
wow! This was delicious... i made a few changes.. first, when i tried to blend the "sofrito" ingredients it didn't work out so well so it was semi chunky when i started the sautee process. I did not have a pressure cooker so I cooked this on the stove top for an hour and 15 mins or so. I only used 5 bouillon cubes and reduced the water by half a cup... still way too much liquid, I think next time I will reduce it to 2 1/2 cups of water. I thickened it towards the end with some flour just enough. Served this over white rice (can't be beat) and made plantains on the side (fried) My husband and 4 year old really enjoyed it.. and my four year old never eats rice, but this was gone!! thanks for the recipe!!

Pasta with Asparagus
great base recipe.. I seasoned it with plenty of salt and pepper, sauteed the asparagus and mushrooms together in a little evoo.. and a splash of white wine for flavor before tossing in multigrain spaghetti and sprinkle of parm cheese. im sure i added some calories with the wine however it just wouldve been too bland for me. I love eating healthy, but when healthy food is on the bland side, thats what makes people not want to eat it at all .. but thanks for the recipe, will make again with my adjustments
