Grilled Marinated Shrimp

Great as is but I grow all my own herbs so used fresh everything. Do it. Fresh oregano isn't as strong a flavor. I can't stand dried, the only thing that should be used for are hoagies & pizza sauce lol...but fabulous recipe!

Melon, Mango, and Avocado Salad

Great summer salad. Being cilantro is a semi-acquired taste I've also done this sans avocado substituting lemons for lime/juice, fresh basil for cilantro, & sweet Cherubs (grape tomatoes, halved) for avocado. But I personally loved the original just the way it is. Many possibilities with fruits, herbs, & juices though. Thank you for a wonderful summer salad that's out of the norm. Will use this for catering also ;)

Amaretto Cheesecake I

Nice base, but like other reviews needed tweaking. I used almond biscotti as my crust. More cream cheese. Using pure almond extract with the vanilla helps with the flavor too. Thanks! ;)

Caramel Macchiato Cheesecake

Pretty good! Use half the sugar, you don't need a full cup. With the caramel on top & whipped cream it's plenty sweet. But definitely a keeper ;)

Pumpkin Pasta

I also made a roux, which u should do anyway. Half & half instead of milk, real butter, no pie spices, extra cheese, & I added browned Italian sausage & fresh parsley & sage. I'm sure it's good as printed also ;)

BBQ Chicken Pizza

Use grilled chicken, cooked crumbled bacon, green onions, Sweet Baby Rays honey BBQ sauce, cheddar & Monterey Jack. Any pepper & the cilantro overpowers the rest of the ingredients. I drizzle mine thinly with ranch dressing. Great the way it is, this is just a preference & another option, ;)

My Best Clam Chowder

Definitely the bacon, YES! I also use red skinned potatoes, leaving the skin on. Makes it pretty. And finish by adding green onion & parsley at the end. Yummy!!

Cranberry Streusel Pie

As someone else stated, add an apple. It'll add sweetness without having to add more sugar. I add honey instead, & about 1/4-1/2 tsp. of ground cloves or allspice. Adds a bit more of a "holiday" flavor & aroma.

Sweet-Sour Broccoli Salad

I used to make a version of this 2x a week where I worked. Instead of peanuts, used sunflower seeds, golden raisins, red onion, & some bacon. The dressing was the same. Cider vinegar really makes a difference. There was also another version with broccoli, red onion, bacon, chunks of cheddar cheese, & a Vidalia onion dressing, for non-mayo people like myself...great base recipe!

Autumn Cheesecake

All the reviews are pretty much spot on. I make cheesecakes for my job & use the basic 3 8 oz. cream cheese, 3 egg, 3/4 c. sugar, 1 tsp. van. recipe. For the top, after microwaving the apples, lay in concentric circles. If you want to save having to use more butter/sugar, brush apples with melted apple jam after cooling cake in the oven for an hour. Pretty!

Virginia Apple Pudding

It was great! Made it for work, needed an extra dessert for a "Fall Favorites" menu real quick. I used extra apple, mixing it into the batter. I also added an egg. Served it with a little fresh cream drizzle dusted with a bit of cinnamon, wonderful...Could also make it to a brunch menu...

Mock Tuna Salad

This is pretty close to a recipe from my diet page,(lost 55ibs. in 2 1/2 months), with the beans being mashed with a fork, VERY little LF mayo, red onion, chopped cucumber, lemon juice, black pepper, & a bit of chopped flat-leaf parsley. The lemon juice help you to not need the salt. Really good stuff!

Yogurt Spinach Dip

Used chopped water chestnuts & green onions like usual spinach dip. I also cut down the mayo,(1/2 cup), & used fat free, increasing the yogurt to 1 1/2 c. Using fresh herbs makes it even better, if your wanting to find ways to use up herbs from your garden. Pretty good.

Mango Cheese Tart with Blueberries

I used frozen mango, 3/4 cup. Add a little vanilla or almond extract. You could also use some instant cheesecake pudding mix to thicken if it doesn't work for you.

Chocolate Banana Cream Cake

I baked it in 2 round cake pans as suggested, slicing to make 4 layers. To the filling, I added pineapple extract & 1/2 a small can of very well drained crushed pineapple. Then I sprinkled the inside layer with lightly toasted coconut & finely chopped macadamia nuts, finishing the top the same way before adding the 3 sliced banana garnish & mint leaves. AWESOME!!!!!
