Stuffed Filet Mignon Bites

Every time I make this I ALWAYS get asked for the recipe. It's delicious, simple, and spicy. I don't care for jalapenos, but how this is prepared is mild enough for my tastes, and easy enough to spice it up for those who prefer a little more punch. This one is a keeper. I've used it with filet as well as a cheaper cut of steak. I do have to say the filet is considerably better, but if you prepare it properly, you could get away with shoe leather, the rest of the ingredients cover for it. /wink

I made this with garlic bread, pepper steak, and deviled eggs. HEAVEN. We all ate until we were stuffed, and then picked at it some more.

Stuffed Peppers

Good... but needed something. A little on the bland side, in my opinion. I used both fresh peppers and garlic as well as the called for powders in the recipe. Still lacking... something. I might add another more spicy pepper in the mix. Habenero, chipotle? IDK, good, but not fabulous.

Marinated Ranch Broiled Chicken

I LOVE this recipe. My husband loved it even more. He ate all the leftovers cold from the fridge, and there wasn't much of that either. Definitately recommend this.

Surprisingly, I did not care for this recipe. I found the cookies lacked that "cookie" quality. They were too light, too bread like, and I did not care for them at all. I LOVE peanut butter cookies, but found these lacking.

Coconut Ice Cream Balls

This was SO good. I added some sugar to the whipping cream to make it a little less sour. I also used a melon baller instead of the ice cream scoop to make tiny bite size balls. Great dish! Looks beautiful, tastes great, and a lovely gourmet-ish dish to impress the folks.

I thought these were delicious, but clocking in at 2+ hours prep time, just not worth the effort. They were great, even my picky 5 year old ate them, but I can make gyoza that I buy at Costco in 8 minutes. I probably would never make these again unless specifically asked and had nothing to do for hours on end.

Di's Delicious Deluxe Deviled Eggs

I was really surprised by this. I thought the recipe sounded good, but didn't pull it off. I found the celery and onion added texture, but not much flavor at all. I usually add Claussen Dill Pickles, and they add a nice bite with texture as well. Maybe add more hot pepper sauce... I couldn't taste it at all. I ended up just adding a ton of deli mustard to give it some flavor, because it was bland, bland, bland.

Grilled Salmon I

Wow! I didn't grill the salmon as the original recipe said, but picked up a few of the other people's suggestions. I replaced lemon pepper with lemon juice and fresh ground pepper, much to my pleasure. I also tried the little foil packets at 425 for 15 and it was just heaven. Moist, tasty, tender, delicious! My husband went back for thirds and fourths! I've made it twice this week already and munch on what little leftovers there are the rest of the night. I am usually uncomfortable cooking seafood, but this was simple, easy, and just fantastic!
