Potato Chip Casserole

This casserole wasn't all to my taste, but I think it's a good base. I think it needs more seasonings, especially in the meat. My husband suggested using one can of cheddar cheese soup as well as cream of mushroom soup with shredded cheddar on top... I did like all the textures going on - the corn, beef, chips, etc. but for me it really needs a nice kick. Maybe southwest seasonings or something like that.

Mushroom Stuffing Balls

These are amazing -- I added a little bit of white wine I had leftover, and boy did that bring out a nice flavor! Though mine didn't ball up very well, they still turned out delicious! Perfect little appetizers.

Rice and Lentil Casserole

This recipe is as many say, basic and homey. But with the HOT pork sausage it is kickin! My husband and I have eaten this several times in the last few months, each time customizing it to whatever veggies we have available... We add just a little less than 1/2 c. rice, and just a little over 1/2 c. lentils. What a great way to add lentils to the diet, while still enjoying a hearty and tasty meal.

Rempel Family Meatloaf

This recipe is excellent -- but I too altered it a tad. I used worcestershire sauce, and probably about 3 tbsp of it. I used a sharp aged cheddar cheese and layered it throughout the meatloaf instead of mixing it right in. I used about half a pkg of onion soup mix because I only had 1 lb. of meat, and added extra freshly chopped onions. Didn't bake the ketchup into it either. This is our new favorite meatloaf recipe.

Quick and Easy Alfredo Sauce

This recipe is INCREDIBLE!!!! I am a HUGE fan. WOW. The only thing I suggest is to maybe use 1/2 or 3/4 of the butter. This is definitely restaurant worthy; but whips up pretty quick. I also added a pinch of nutmeg, and didn't notice it. Day two: Refrigerates and reheats well on the stove. So-so in the microwave. It made so much sauce that we were dipping out carrots in it just so it wouldn't go to waste (made a nice carrot dip too)! End: try the sauce. If you like alfredo you won't be disappointed.

Alfredo Potatoes

This is a very good twice baked potato. I also used the homemade alfredo sauce which was AMAZING (though a little too oily - next time I'll use half the butter) I used fresh minced garlic, but I think it could use a little more. Also, I like a bit more cheese. I think I'll put freshly grated Parmesan on it too. Try it out!

Rosemary French Bread

This bread is perfetto! I used fresh rosemary, since I had some. I followed Grannyloohoo's suggestions and it turned out wonderful! Goes very well with (2-1) olive oil & balsamic w/ ground pepper. Also delicious with butter.

Spicy Turkey Burgers

Delicious -- what a fresh twist on turkey burgers. I didn't have fresh dill, but dry works just fine. I also added a little more tapatio to give it more of a kick. My husband and I ate ours with tomato, avocado, and a dab of mayo.

Curried Scrambled Egg

This is a scrumptious twist on scrambled eggs. I love it! The only thing I do differently is cook it all in coconut oil instead of olive. Delicious any time of day.
