Eggplant Salad

This is awesome! My husbands comment was "this is really good, I want to have this at least once a week!" I am making it again tonight to serve as a side with spaghetti and meatballs. If cut in chunks it works well as a side, if you cut it fine as the recipe says then it works well on crackers/whatever fits your fancy. Really good I would recommend this to everyone and have! For 2 people a medium sized eggplant worked perfectly!

Avocado Quinoa Salad

This sooooo good! I will make this a staple side dish in our home. I did leave out the lemon (didn't have any on hand) the avocados did not brown at all.

These were perfect, I changed one thing just because I didn't want oil in them like store bought ones. So I replaced the oil with 1tsp of xanthan gum.

Spicy Mexican Style Zucchini Casserole

Awesome recipe. We have tried it as written and then out diets changed to a fat free vegan diet so the next time we left out the olive oil and cheese. It was still awesome. The leftovers are perfect in a tortilla with lettuce, avocado and bell peppers a squeeze if lime is good addition as well.

Pizza Dough I

I have used the original recipe (with olive oil) many times and it is perfect but our diets changed so we do not add the oil now and it still turns out perfectly. Thank you for the great recipe Gudny!

Roasted Brussels Sprouts

Awesome! For my first time ever eating brussels sprouts these were terrific! The leaves that fall off turn into crunchy yummy chips. I'm going to make a batch like this to see if my 2 & 3 yr old will eat them.

Overnight Cinnamon Rolls I

I have used this recipe for Christmas breakfast for the past 2 years. This year will be #3. I pop them in the oven while kids go through stockings, by the time they are done so are the rolls and everyone gobbles them up forgetting there are still presents left to open. You can tweak it a bit but the original is still amazingly yummy!
