Eggplant Salad

This is awesome! My husbands comment was "this is really good, I want to have this at least once a week!" I am making it again tonight to serve as a side with spaghetti and meatballs. If cut in chunks it works well as a side, if you cut it fine as the recipe says then it works well on crackers/whatever fits your fancy. Really good I would recommend this to everyone and have! For 2 people a medium sized eggplant worked perfectly!

Tortillas II

These were perfect, I changed one thing just because I didn't want oil in them like store bought ones. So I replaced the oil with 1tsp of xanthan gum.

Fettuccini Tomato Rustica I

My husband loved this recipe! He said it had a authentic flavor. There were few changes I had to make only because I didn't have all ingredients on hand. I didn't have goat cheese so I used mozzarella and it's way to cold and windy to grill so i used egg, italian bread crumbs and fried the chicken in olive oil. I also used pre-marinated sun dried tomato's. This did make it a lot simpler. Next time I will make sure to grill the chicken and have goat cheese.

Mean Woman Pasta

This is so good... We have had this a few times. Each time we try something a little different. Adding some fresh mozza or parmy. We are going to try goat cheese the next time. But even without adding anything extra in this is a awesome recipe.

Spicy Mexican Style Zucchini Casserole

Awesome recipe. We have tried it as written and then out diets changed to a fat free vegan diet so the next time we left out the olive oil and cheese. It was still awesome. The leftovers are perfect in a tortilla with lettuce, avocado and bell peppers a squeeze if lime is good addition as well.

Jacksonville Crisps

This is a very simple recipe. My 19month old helped to make them and loved eating them. I did use butter instead of shortning. Other than that we stuck to the recipe and they turned out awesome.

Acorn Squash Wonder Tacos/Chalupas

This was so tasty. The store was out of acorn squash so we used a small butternut squash and it was awesome. I did not "fry" them, just a smidge of olive oil in a pan and they cooked nicely. I also forgot about the cheese entirely (until we ate the left overs) and it was still delicious. My husband liked them with a bit of taco sauce on top. A great recipe Thank you Becky!

Overnight Cinnamon Rolls I

I have used this recipe for Christmas breakfast for the past 2 years. This year will be #3. I pop them in the oven while kids go through stockings, by the time they are done so are the rolls and everyone gobbles them up forgetting there are still presents left to open. You can tweak it a bit but the original is still amazingly yummy!

Pancakes on the Go

These are so good and it's a easy way toget my 20 month old to eat oatmeal! Plus he can run around with them and there is no worries about a sticky mess!! The only change I made was melted butter instead of oil and I didn't have buttermilk so we just used milkand a TBS of vinegar.

Sausage Minestrone

I used Aidells Sundried tomato sausage it added some really good flavor! just 1/4 each sausage... we don't like regular sausage in it but love the recipe. I also used great northern beans and white kidney beans for the different texture and it brought addition flavor.

I have used the original recipe (with olive oil) many times and it is perfect but our diets changed so we do not add the oil now and it still turns out perfectly. Thank you for the great recipe Gudny!

Hamburgers and Ketchup Gravy

This is a good recipe. Adding egg to the meat for a binder is a must! I did not do this and my husband and I agree that it is similar to Sloppy Joes only because it all falls apart... but it was still good over egg noddles.

Turkey Bow Tie Skillet

This was really good and very simple! It's a good one to make if your rush... I did put in a few shakesw of red pepper flakes and chili powder to the turkey meat, I thought it might be a little bland as other reviewers thought.

Roasted Brussels Sprouts

Awesome! For my first time ever eating brussels sprouts these were terrific! The leaves that fall off turn into crunchy yummy chips. I'm going to make a batch like this to see if my 2 & 3 yr old will eat them.
