About this Cook
When I was little, I loved to make mud pies and pretend to be Julia Child while instructing my audience (farm cats) in a fake British accent. After years of being single and eating takeout or soup out of a can, I finally found the love of a good man who has inspired me to cook. Nothing makes me happier than to have a house full of people stuffing their faces.
My favorite things to cook
Mexican food. Since moving to Arizona, my palate has really changed. I can withstand a lot more heat than I ever could back home in Missouri. We get fire roasted Hatch green chiles from New Mexico and freeze them. They make for great stacked enchiladas (see Sour Cream Enchilada review). I also love to make ceviche because sometimes, I try to be healthy and eating ceviche reminds me of good vacation times in Rocky Point Mexico.
My favorite family cooking traditions
We had a garden the size of a football field so mom spent all summer canning. The pressure cooker terrified me but boy, did it churn out some wonderful things. Apple butter for one. Nothing like it smeared on cinnamon raisin bread. Grandma made homemade egg noodles that were too die for and fried chicken that tasted better cold. I still can't replicate it. Don't read this if you are a vegetarian but one year during deer season, we jerked the entire deer by cooking it in the oven on the lowest temp possible. The smell was so deliciously maddening that we ate up all the tender juicy jerky in a few weeks time.

Fresh Southern Peach Cobbler
Make this once and you will get requests to make again and again. I have to confess though, I have never actually used fresh peaches. Either because they aren't in season, or I'm just feeling too darn lazy to go to the trouble. If you are a lazy bum like me, just make sure and drain the peaches real well. I think I use about 3-4 cans of the kind that is in juice, not syrup. Also, serve with vanilla icea cream to get the full experience. My boyfriend and his daughter request this for their birthday instead of cake.

Ultimate Breakfast Casserole
Add a ton more pepper if prefer more flavor. Definitely comfort food or good hangover recovery breakfast. To give you an idea, I made these while some friends were crashed out on a sleeper sofa in the next room. I took it out of the oven, left it on the counter to cool and went back to bed. When I got back up, both of them were hunched over it, eating it right out of the pan with spoons, and groaning with pleasure.
