Buffalo Style Chicken Pizza

Very good recipe! Extremely easy and quick. The combination of the mozzerella and blue cheese with the kick of the wings made a very interesting and surprisingly pleasing taste. This is good when you're tired of the same old pizza. Even my ultra-picky boyfriend liked it!

Cheese Bread

Yum! I needed a quick yet filling late-night snack for my husband when he got home from work, but I ended up eating it myself. I used leftover steak rolls instead of bigger bread, and it still worked very well. I followed some other people's advice as far as only spreading on a layer of mayo, mixing all the cheeses together, and baking instead of broiling - actually I baked it until everyhing started to melt, then broiled it on low for a few minutes to make the top toasty. Next time, I may try adding some canned chicken to the cheeses to make it a small meal, even though it is excellent as is.

Restaurant-Style Zuppa Toscana

I made this last night because I wanted to make something special and warm since we had an unexpected snow (Yes, in late April). My fiance is the pickiest of picky eaters, yet he loves the Olive Garden Soup, and this - he ate almost the whole pot! I also made a lasagna which never got touched because he filled up on soup. For mine, I did make two small changes in that I used crumbled bulk sausage instead of links, and I used straight chicken broth instead of the soup base, and it still turned out divine. Very hearty, and perfect. I was told it is the best soup I've ever made. Thank you, Nancy!

Old Fashioned Potato Salad

Very yummy potato salad. Made this for my boyfriend's parents, and they loved it. I used red skinned potatoes and cubed them before boiling them to cut down on the potato cooking time. I also had to omit the celery and celery salt, and instead of relish, I chopped up some pickles, but it was still so good. High marks!

Banana Banana Bread

Very good recipe. I've been trying to get my mom's banana bread recipe out of her, but got tired of waiting; this one is better anyway! My boyfriend practically devoured the whole loaf, and suggested that I should sell it at our local farmer's market. I used 6 large bananas when I made this, and the bread came out so moist and banana-y. I also added a bit of nutmeg and cinnamon, and next time I may add some walnuts. Wonderful, wonderful recipe!

Joey's Peanut Butter Cookies

YUM! These cookies are very moist and not too sugary. They have just the right amount of peanut butter taste without it being overpowering. I actually had a bag of chocolate and peanut butter chips that I threw in the batter, and the cookies came out great. The peanut butter chips gave a little extra peanut-kick, and the small amount of chocolate gave it a subtle little surprise. This recipe was also very easy to make. Will be made many more times!

Salmon with Dill

So incredibly easy and tasty. I often don't gethome until 10pm, and this recipe helped me have a quick, tasty meal that didn't sit heavy in my stomach at such a late hour. At first I looked at the few seasonings and was a little doubtful that it would be flavorful, but it turned out fabulous. I used garlic powder instead of onion powder, and in my oven, the fish only needed 15 minutes to bake. I'll definately be making it again!

Creamy Spinach Casserole

I made this for my family at Thanksgiving, and I couldn't believe how easy it was. I had set aside tons of time to make this, but it was done before I knew it, and my family absolutely loved it. The soup gives it a nice smooth taste without crushing the taste of the spinach. Before I left, I caught my mother (who adamantly believes I can't cook) copying down the recipe!

Cream Cheese Mints

These mints are fabulous! I made them for a family 4th of July party by dividing the dough into 3 parts and coloring one part red, one blue, and leaving the other white. I finished them as usual, and arranged them as a flag. One problem I did have (having done this in the middle of summer) was having the mints start to melt while they were sitting on the table, but that was easily solved by throwing gel ice packs in a square decorative basket, covering them with a towel, and arranging the mints on top of that! I can't wait to experiment more with these neat little candies, they are a total crowd pleaser.

Blueberry Zucchini Bread

Yum! I was getting ready to leave for a vacation, and was concerned about some zucchini I had been given going bad while I was gone. I also happened to have blueberries that I also didn't want going bad. Perfect solution! I followed other user's suggestions, and used 1 cup of applesauce instead of the oil, and was happy to increase the fruit content. It was so easy, my 2-year old even had a blast helping by both mixing, and adding the blueberries all by herself (one at a time, but hey, she was happy). I made 2 full-size loaves and baked them for 1 hr. 15 min and they came out perfectly. Nice and moist, slightly dense. I still have one large zucchini left. Debating whether to take it on my trip and make another batch while away.

Baked Omelet Roll

Very great idea! I actually made this without rolling it, and it still turned out very nicely. I also threw in a handful of crumbled easy-serve sausage, and I'm looking forward to trying it with diced ham, and other mix-ins. Very easy and tasty!

Amaretto

Incredible! So much like the real thing! It's easy enough that I was able to whip up a batch in no time for unexpected company. It works great in recipies too! It's so much less expensive than spending at least $15 for a small bottle of Amaretto and my old Italian family couldn't even tell it was homemade!

Cheese Filled Triangles

An excellent recipe! The phyllo wasn't as hard to use or find as I thought it would be, and I used red onion instead of a regular one, and it turned out great. Everyone in my company raved about these pastries, and my boss even smacked people's hands away so he could get the last one!

Strawberry Spinach Salad I

A TRIUMPH!!! I have been trying to get my boyfriend to eat spinach since I met him, and this recipe did it. I took everyone's advise and halved the dressing, but it was plenty. I served it, and after he ate it I told him what was in it. He simply looked at the plate and said "Where was the spinach? That tasted too good to be spinach!" I'm sending this recipe to his mother! Quick and Easy Alfredo Sauce

Very excellent recipe. So much smoother, creamier, and easier than other alfredo recipes I've tried. I did make a few of my own adjustments; I used 1 cup of cream and 1 cup of milk like a few others suggested, I used nutmeg instead of garlic powder and pepper, and used parmesean and romano cheeses. It was so luxurious, and reheats slightly better than some homemade sauces. Great for tossing with pasta or more substantial items like meat and veggies. Definately a keeper!

Easy Chocolate Fudge Cake

I made this cake for our Valentine's Tango Workshop, and it almost disappeared before I got any. I used a bundt pan which made the cake look very elegant once it was finished. I had to substitute unsweetened baking chocolate for the cocoa powder, but it still worked great. This cake is so easy and cook-friendly, I was actually able to make it without any measuring instruments (They were all "mising in action" the day I had to bake). This cake will be making many reappearances at my dessert tables, I can't wait to make it for my family!

Pesto Cheesy Chicken Rolls

I made this tonight and all I can say is WOW! It was fantastic. My husband at first poked at it curiously and asked, "What's the green stuff?" but proceeded to inhale it. The taste was so sophisticated, yet it all came together so simply. I read a few other people's reviews and followed some advice: I used Meunster cheese inside and sprinkled shredded Italian blend on top of the breasts during the last 5 minutes of cooking. I read that some were having trouble with the chicken getting dry, so I cooked it for 35 minutes at 375, but also added a splash of white wine to the pan and covered the dish while baking, so it stayed quite moist. Bravo, I'll definately be making this again.

Spiced Butternut Squash Soup

I enjoyed this soup. Simple to make and put together (once I figured out how to peel a cooked butternut squash, that is). The spices were just right. May also taste good with pumpkin. I was also impressed with how creamy it actually got. I tried it both plain and with a dollop of light sour cream, and the sour cream truly adds to the richness, I liked it best with it. My husband didn't care for this soup, he said it was "too sweet", but he refuses to eat any vegetables, so I don't count his opinion. I'm not giving up on this soup despite his input, I liked it and will continue to play with it.

Taco Casserole
