Karen's Fried Green Tomatoes

Reviewed: Mar. 1, 2014
Wow- these are delicious! I left out the sugar, and subbed in 1/4 cup of cornmeal for the flour to give it some crunch.

Spiced Slow Cooker Applesauce

Reviewed: Feb. 10, 2014
This is just as good to smell cooking as it is to eat! I only used 1/4 cup sugar, otherwise it would have been way too sweet.

Moist, and flavorful. I did add in lemon zest, which really made it the best ever banana bread!

Chocolate Coffee Buttercream Icing

Reviewed: Nov. 3, 2013
Delicious! I didn't use all the powdered sugar, I just added in more cocoa powder to thicken it. I used a combination of Hershey's and Hershey's special dark powder. Everyone loved this frosting!

Basic Cheesecake

Reviewed: Apr. 3, 2013
We thought this was a really good cheesecake. It's creamy, and rich, with a hint of tang from the sour cream. I personally like my cheesecakes less sweet than this was, but the kids thought it was the best! Mine did crack pretty badly, but, I know that pulling a cheesecake out of the oven right away will cause that, so I expected it. We just covered it with raspberry sauce. This one is definitely going in the recipe box.

Spicy Slow Cooker Black Bean Soup

Reviewed: Mar. 22, 2013
We really enjoyed the flavor of this soup- I did decrease the jalapenos. The only problem is the texture of the beans- we don't think the slow cooker gets them soft enough, even after soaking. I agree with the review that says to boil them first on the stovetop, if you are expecting a soft bean.

Quinoa Chili

Reviewed: Feb. 23, 2013
A super hearty chili- I left out the beef, and jalapeno. I have a small rice cooker that I use to cook the quinoa in, which works great! I make this chili, with variations, several times a month!

Caprese Quiche

Reviewed: Feb. 10, 2013
A very tasty quiche- the caramelized onions are so good in this! I only had 6 eggs, so I added in 1/2 cup of milk.

Chewy Brownie Cookies

Perfectly chewy on the outside, and soft on the inside- even when slightly over-cooked! Has a great chocolate flavor, but is slightly too sweet.

Homemade Biscuit Mix

Reviewed: Sep. 2, 2012
This mix worked great for our picnic! I mixed it up at home, adding powdered buttermilk, so that all I had to add was water to make the dough. We used a couple of tablespoons of oil to cook them in our pan on our camp stove. They turned out soft, and really tasty!

Gourmet Mushroom Risotto

So rich and creamy! I added in garlic, and used onion in place of shallots. This may take time to cook, but it is not difficult, and is worth it!

Chinese-Korean Cucumber Kimchi

Reviewed: Jul. 10, 2012
I used daikon radish in place of the cucumber, and it worked really well. The flavor was fine- spicy, but not extreme. It was too sweet, though, so next time, I'll use at lest half less of the sugar.

Delicious! I did substitute dried cranberries for the chocolate chips, so I had mac nut, cranberry and white chocolate chip cookies. YUM! Good thing this recipe makes so many cookies!

Cranberry Scones

Reviewed: Jun. 5, 2012
A lovely, soft scone. The batter was definitely softer than "kneadable", so I just dropped it in mounds onto the baking sheet and flattened them a bit. The flavor is great- the citrus really compliments the cranberries.

Eclair Cake with Chocolate Ganache

Reviewed: Mar. 17, 2012
Wonderful! I used this recipe for all parts of the cake, but followed the directions for the shape of it from the Chocolate Eclair Torte recipe- dropping tablespoons of the dough in a circle onto parchment paper to bake. I spread the filling and ganache on top of that. The filling is very tasty- the heavy cream tones down the sweetness of the pudding, and makes it really rich. The dough is light and soft, and puffed up perfectly as it baked. I will definitely be making this again!
