Sweet Potato Breakfast Casserole

I found this recipe because I wanted to use up previously frozen shredded sweet potatoes, now it will become a regular entrée at dinner. I served this with rice and steamed veggies to make it a dinner meal. I wondered about adding the savory eggs/cheese/onion with the sweet potato and it was really good.

Scottish Shortbread IV

Amazing, delicious! I chilled the dough as was suggested, but it was still very very crumbly. I pressed it into a pan and then sliced it up before cooking, and 10 minutes after cooking. I don't know if they get better with time because they didn't last long around here. I'd give 5 stars, but the dough was very crumbly and I coulnd't roll it out.

I made this vegetarian by using Morningstar Farms Chik'n Strips and we all liked it (including children). It was really good with the rice recipe recommended by Bruce (Sep. 2011).

Cottage Cheese Roast

I've been a vegetarian for years and my meat-eater hubby and I both really liked this. My husband even asked me to put this into our rotation of dinner entrees. It is the weirdest combination of ingredients and I did use an allrecipes.com dry onion soup mix recipe to eliminate the beef bullion. My picky vegetarian kids did not care for this, but maybe if I serve it a few more times they will.

Margarita Cake with Key Lime Cream Cheese Frosting

This rating is just for the frosting. This frosting is AMAZING!!! I put it on a lemon cake a while ago and it was a fabulous lemon-lime mix. I froze the extra frosting and it still had the smooth texture--I halved the frosting recipe and integrated that into my stored portion with amazing results! This frosting is not too sweet; it's a wonderful mix of tangy and sweet. It is my go-to frosting now for vanilla or non-chocolate cakes. Thank you so much for sharing it!

Lemon Cake

Super moist! I made these for my daughter's birthday with lemon cake mix and 1/4 c. lemon juice added to 1 1/2 c. water. AMAZING! (I used a different icing, so the 5 stars are just for the cake.)

Apple Pie by Grandma Ople

I love how it's not too sweet. Amazing! I added 1 T. vanilla to the water (and deducted 1 T. water for balance) I also added nutmeg, ground cloves, and 1 t. cinnamon (as several reviewers suggested). I baked it 1 hour at 350 and it was GORGEOUS!

Mushroom Lentil Barley Stew

DELICIOUS!!! Hearty and filling. My daughter who doesn't like mushrooms loved it (until I told her it had mushrooms). I made this exactly as directed in the recipe except for 1 tsp. black pepper and I didn't have dried shiitake mushrooms, so I used 4 oz. fresh shiitake mushrooms instead.
