Creamy Chicken and Wild Rice Soup

Reviewed: Nov. 2, 2010
very good! my bf loved it also! :) i boiled some chicken leg quarters and veggies to get the broth. i used white rice and sauteed some onion, garlic and carrots to add to it. i used milk because i didn't have heavy cream on hand. i don't think it made a difference. this was even good reheated the next day for lunch. i will definitely make this again, thank you!

Italian Spaghetti Sauce with Meatballs

Reviewed: Nov. 2, 2010
my first sauce from scratch, very good flavor! the meatballs seemed to have a texture like they were boiled, which i wasn't used to but it was still good. i put half the sauce through the blender to smooth it out. very good, will definitely make again.

Zucchini Risotto

Reviewed: Oct. 10, 2010
I loved the flavor combination. I halved the recipe but doubled the zucchini and sundried tomatoes. I used fresh basil from my garden and gruyere cheese because that's what i had on hand. It was fantastic! I will definitely make this again. :)

Simple White Cake

Reviewed: Jun. 7, 2010
exactly as the name implies, this is a great simple cake. it uses ingredients i always have on hand, and whips up quickly and easily without much fuss. i've used this recipe for cupcakes as well as 8x8 square cakes. it comes out great, and seems to pair up well with any kind of frosting. thanks!

Black Bottom Cupcakes I

Reviewed: Nov. 23, 2009
These are awesome! I followed the recipe exactly and I got a ton of compliments on them. There is extra cream cheese mixture, but I just made a cupcake with it. :) The mixture isn't runny like some people said it was... I don't know what they were doing. I only got 18 cupcakes following the recipe.

Hot Pepper Jelly

Reviewed: Nov. 2, 2009
Fantastic Taste! This was my first jelly-making experience. Since a lot of reviewers said the jelly did not set up properly, I decided that instead of doubling the pectin I would use less of the other ingredients. I ended up with about 2.5-3 cups of finely chopped peppers, and used the whole 1 c cider vinegar and 5 c white sugar. This caused my jelly to be a little over-jelled for my preference. Next time I'll actually try the recipe the way it is written. Very great taste though!

Diabetic Dog Treats

Reviewed: Dec. 23, 2008
i used baby food like other reviewers. one beef, one beef and vegetables, and one chicken and vegetables. the jars were different sizes, but i used between 5 to 8 oz for each batch. i lined my baking sheet with aluminum foil for one batch and parchment for the next, and both times the treats stuck really bad. i'm not sure how to avoid this, would PAM be bad for dogs?! besides that, my dog LOVED them. she almost took my finger off when i was feeding them to her! good thing dogs don't care what their food looks like. lol.

Chocolate Cookie Cheesecake

Reviewed: Sep. 10, 2008
This cheesecake is fabulous w/o changing a thing! I entered this cake in a dessert bake-off at my office and won first place! :) I found it to be quite time consuming, but it's worth the effort.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Reviewed: Aug. 7, 2008
I've made this a couple times (without the nuts) and I always get rave reviews. I LOVE the icing, it compliments the cupcakes better than a regular cream cheese frosting would. The folks in the office can't wait for me to make it again! Thanks!

Stuffed Jalapenos III

Reviewed: Aug. 6, 2008
I've tried these several times with different seasonings and shredded cheeses mixed in with the cream cheese and it was amazing every single time. They didn't look very presentable when I made them, but they more than made up for it in taste. Everything is better with bacon! lol **WEAR GLOVES** when seeding the peppers, I didn't, and I couldn't put my contacts in for a week!!

Instead of ketchup I used two small cans of tomato paste. Absolutely delicious, and a lot easier than I had originally anticipated! :) Thanks!
