Meatball Lasagna

Yum! Even my husband, who doesn't like "tomato chunks," gobbled this up. The meatballs added tons of extra flavor; I will never go back to plain old hamburger again. To save time, I used 30 small pre-packaged meatballs, defrosted them in the microwave, and mashed them with a potato masher. No-boil noodles were also a huge time saver. For the tomato sauce, I added mushrooms and red pepper flakes and used Italian flavored diced tomatoes. I only had enough of the ricotta cheese and egg mixture for one layer of it, so next time I will double it in order to have two layers. It worked well to make two 8x8 pans instead of one large one.

Chicken Lo Mein

This was amazing! My husband was late coming home, so the chicken ended up marinating for a couple of hours in the fridge. The meat turned out so tender. Even my vegetable-hating husband thought it was awesome. I used the attachment on my mixer to make my own own homemade noodles and boiled them for 10 minutes. Fabulous!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Excellent recipe! I used the Coconut Cream Cheese frosting recipe from this site. I put the cake batter in the baking cups first, and then piped in the brownie filling as many others did. This worked well. (As an experiment I used a teaspoon to drop brownie filling into two of the cupcakes, and this also worked just as well.) This a fabulous recipe that I can't wait to share with my co-workers tomorrow.

Salsa II

This was a great recipe! I halved the recipe using fresh produce from my garden. In addition, I used half the amount of jalapenos, roasted them, and used almost all of the seeds. It was the perfect amount of heat.

Basil Tomato Soup

Yummy! This is an excellent soup. I used fresh tomatoes and fresh basil from my garden. No need for sugar when you use fresh tomatoes. I was inspired by Lindsay's advice and used 3/4 c. half and half and 1/4 c. milk instead of the heavy cream. I also only used 3 T. butter and added more fresh basil and a few shakes of dried. Delicious!

Vanilla Glaze

Excellent on the Coconut Pound Cake found on this site. I substituted coconut extract for vanilla because of the cake. It was very tasty. Next time I will need to sift the powdered sugar, as it did turn out a bit lumpy.

Coconut Cream Pound Cake

Shepherd's Pie VI

Made this for my book club, and shared leftovers with co-workers. Everyone loved it. I used a packet of brown gravy with water instead of beef broth. I also added green onions and soiur cream to the mashed potatoes.

Classic Chicken Noodle Soup

This was fantastic. I made homemade noodles in the pasta maker, and they turned out fabulous. I made the chicken soup base the day before, and then made the rest the night we ate it. (For a person who works for long hours, it's a lot of prep to do it all in one night.)

Sour Cream Coffee Cake III

Chicken and Broccoli Braid

Only used one sheet of crescent roll dough and it was plenty (just needed to be stretched out). Baked at 350 for 30 min. and it was golden brown and not doughy at all. A very versatile recipe that can be used with many combinations of protiens, veggies, herbs, and sauces.

Lavender Shortbread Cookies

Got rave reviews from the co-workers on this one! I did not use mint or lemon zest because I didn't have any on hand. I added some lemon juice instead but it didn't really add any flavor. Next time I will be sure to use the zest. I rolled the dough in wax paper, chilled it for an hour, and cut it into slices to bake. I also sprinkled a bit of sugar on top of each cookie before baking. These cookies did not spread as some other reviewers mentioned.

Burrito Pie

I expected this to be just ok, but this was surprisingly tasty! It was not nearly spicy enough, so I added a significant amount of hot pepper spices from our farmer's market. In the future, I think I will leave the tortillas out and just serve this as a hot dip with tortilla chips.

Easy Cheese Ball II

This was a tasty recipe! Half was plenty for a small gathering (8-10 people). I rolled it in chopped bacon as opposed to pecans, using all but 4 slices of a regular-sized pack of bacon.
