Roasted Chickpeas

Reviewed: Aug. 12, 2009
I followed another cook's suggestion and dry roasted the chickpeas at 300 degrees for an hour, shaking them every 10 minutes or so. I then drizzled them with olive oil and added sea salt and garlic powder. I turned up the heat to 400 degrees for 30 minutes, shaking them every 10 minutes. They were super crunchy. My co-workers couldn't get enough! I'll definitely try them with cayenne pepper next time.

Mine turned out really dry and there was too much lemon for my taste.

Good, but not the same as what I had in Ireland. I'll try it again, though.

Best Marinara Sauce Yet

Amazing sauce. Tastes great with a meatball lasagna I found on this web site. I make double the batch and freeze it in small containers.

Authentic Chinese Egg Rolls (from a Chinese person)

A very good recipe, but still not as good as those made by Asian families in my community. I don't know what I'm missing . . .

Creamy Cajun Shrimp Pasta

Reviewed: Jun. 20, 2009
We loved this recipe and will definitely make it again. Like many others, I only used 1 tablespoon of Cajun seasoning and it was plenty. (My husband likes his food extra spicy, and he agreed that 2 tablespoons would have been too much.) I made the same modifications as another reader because I had frozen cooked shrimp on hand: I mixed the dry ingredients ahead of time. Then I melted the butter, added the dry ingredients, cooked the mixture for 5 minutes, and added minced garlic from the fridge. After a minute, I slowly added the milk, brought the sauce to a boil, and added the defrosted shrimp, cooking until heated through. I added the lemon juice at the end.

A good recipe, but they definitely need a chocolate drizzle on top.

Meatball Lasagna

Reviewed: Nov. 29, 2008
Yum! Even my husband, who doesn't like "tomato chunks," gobbled this up. The meatballs added tons of extra flavor; I will never go back to plain old hamburger again. To save time, I used 30 small pre-packaged meatballs, defrosted them in the microwave, and mashed them with a potato masher. No-boil noodles were also a huge time saver. For the tomato sauce, I added mushrooms and red pepper flakes and used Italian flavored diced tomatoes. I only had enough of the ricotta cheese and egg mixture for one layer of it, so next time I will double it in order to have two layers. It worked well to make two 8x8 pans instead of one large one.

Peanut Butter Cupcakes

The frosting was the highlight of these cupcakes. The honey is a nice addition. Next time I will double the batch as the recipe only made 20 small cupcakes.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Nov. 3, 2008
AWESOME recipe! We usually enjoy extra spicy food, but the use of two chipotle peppers was a bit much, even for us. Next time, we'll go with just one. Otherwise, fabulous!

King Ranch Chicken Casserole III

This was good, but it was kind of bland compared to what we usually eat. I guess given the high ratings, I was expecting more. It reminded me of very very mild enchiladas.

This was tasty, but after the reviews I guess I was expecting more. The bread was moist, but the flavor wasn't enough to blow me away.

Quick and Easy Alfredo Sauce

Reviewed: Sep. 1, 2008
I don't keep cream on hand at home, so I was excited to find an alfredo recipe that didn't require a trip to the grocery store. The sauce turned out ok; being from Wisconsin, I'd probably add more cheese to thicken it up a bit.
