Vanilla Glaze

Excellent on the Coconut Pound Cake found on this site. I substituted coconut extract for vanilla because of the cake. It was very tasty. Next time I will need to sift the powdered sugar, as it did turn out a bit lumpy.

Basil Tomato Soup

Yummy! This is an excellent soup. I used fresh tomatoes and fresh basil from my garden. No need for sugar when you use fresh tomatoes. I was inspired by Lindsay's advice and used 3/4 c. half and half and 1/4 c. milk instead of the heavy cream. I also only used 3 T. butter and added more fresh basil and a few shakes of dried. Delicious!

Pie Iron Tacos

We made these on a camping trip and served them with sour cream and salsa. While it's a good recipe and a nice break from typical camping food, next time I'd probably add peppers or use a spicier taco seasoning to give it a little more heat.

Lime Cilantro Rice

This does taste a lot like the rice in Qdoba's burritos. I used a rice cooker and we ate it as a side with the "Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo" (yum!) from this site. I thought the rice was a fresh, tasty, and simple side; my husband thought it was good, but didn't feel it was flavorful enough to be a stand-alone side dish. Perhaps using broth instead of water would give the rice a little more flavor.

Salsa II

This was a great recipe! I halved the recipe using fresh produce from my garden. In addition, I used half the amount of jalapenos, roasted them, and used almost all of the seeds. It was the perfect amount of heat.

Marinated Grilled Shrimp

The shrimp were good...not "oh, wow, these are the best shrimp I've ever put in my mouth" good, but tasty nonetheless. I took the suggestion from another poster and only used 2 T. olive oil. I also didn't have fresh basil, so I substituted dried. I doubled the cayenne pepper, and my husband and I still felt it could have used more. 8/6/11: Made it again and used ketchup instead of tomato sauce (didn't want to open a whole can), sweet chili sauce, and dried hot peppers from the local farmer's market. Still not 5-star amazing, but really good!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Excellent recipe! I used the Coconut Cream Cheese frosting recipe from this site. I put the cake batter in the baking cups first, and then piped in the brownie filling as many others did. This worked well. (As an experiment I used a teaspoon to drop brownie filling into two of the cupcakes, and this also worked just as well.) This a fabulous recipe that I can't wait to share with my co-workers tomorrow.

Ruth's Grandma's Pie Crust

This was my first effort at pie crust, and it was tasty; however, when I rolled it out, it kept breaking apart. It was very frustrating and I ended up piecing it together when pressing it into the pie plate. I'm not sure what I did wrong.

Chicken Lo Mein

This was amazing! My husband was late coming home, so the chicken ended up marinating for a couple of hours in the fridge. The meat turned out so tender. Even my vegetable-hating husband thought it was awesome. I used the attachment on my mixer to make my own own homemade noodles and boiled them for 10 minutes. Fabulous!
