Aunt Norma's Rhubarb Muffins

Awesome fluffy muffin texture. Not overmixing is key. Would be great with other mix-ins, but the tart rhubarb was delicious.

Buffalo Chicken Dip

Made with shredded chicken breast instead of canned. Substituted 1 c. shredded mozzarella for cheddar cheese. Warmed and served in a crock pot. Was a hit at cookout. Next time will omit mozzarella cheese, as it really didn't add anything.

Spicy Chicken Thai Soup

Was delicious served over jasmine rice. Used 1.5 lbs. chicken thighs and 1 lb. chicken breast. The thighs were definitely more flavorful. Red curry paste was not hot; had to triple the amount to get any heat. Overall, a good recipe.

A pretty good recipe, overall. I added some milk and a little extra wine to dilute the sauce and cut back on the saltiness described by other raters. Not a bad recipe.

Flourless Peanut Butter Cookies

These were ok. The flavor was good, but the consistency was off (though that is to be expected since there's no flour). An easy gluten-free recipe that doesn't require alternative types of flour.

Easy Cheese Ball II

This was a tasty recipe! Half was plenty for a small gathering (8-10 people). I rolled it in chopped bacon as opposed to pecans, using all but 4 slices of a regular-sized pack of bacon.

Burrito Pie

I expected this to be just ok, but this was surprisingly tasty! It was not nearly spicy enough, so I added a significant amount of hot pepper spices from our farmer's market. In the future, I think I will leave the tortillas out and just serve this as a hot dip with tortilla chips.

Lavender Shortbread Cookies

Got rave reviews from the co-workers on this one! I did not use mint or lemon zest because I didn't have any on hand. I added some lemon juice instead but it didn't really add any flavor. Next time I will be sure to use the zest. I rolled the dough in wax paper, chilled it for an hour, and cut it into slices to bake. I also sprinkled a bit of sugar on top of each cookie before baking. These cookies did not spread as some other reviewers mentioned.

Amy's Garlic Egg Chicken

Good flavor, but salty. Would omit the salt next time. Made half the crumb mixture, which was perfect. Used panko crumbs instead of bread crumbs, but it did not come out crispy at all, so I'm not sure what I did wrong...

Chicken and Broccoli Braid

Only used one sheet of crescent roll dough and it was plenty (just needed to be stretched out). Baked at 350 for 30 min. and it was golden brown and not doughy at all. A very versatile recipe that can be used with many combinations of protiens, veggies, herbs, and sauces.

Sour Cream Coffee Cake III

I only had 1/4 cup of sour cream, so I added 3/4 c. of buttermilk to the mix. Otherwise, I made the recipe as written. Got rave reviews from my co-workers.
