Oven Baked BBQ Ribs

this got two stars for the method, not just the bbq sauce. the ribs were dry and yes, the meat detatched itself from the bone but if the meat is dry, it doesn't matter. the bbq sauce was totally watery and what it reduced to was borderline on burning by the end of the third hour. i should have went with my gut and kept the water out of the recipe and used it in the last hour of cooking (but at 250 for several hours as opposed to 350 for three hours). and the onions were just cumbersome to the sauce itself. i should have just used onion powder. i don't know what recipe the other users were making to be so delighted in this but i certainly wasn't impressed.

Cilantro Lime Cod

i think this recipe is full of good ideas but isn't quite right. i used fresh onion with the garlic and sauteed it in 2 tbl of butter. i then put my flounder in a baking dish and seasoned the fillets with salt, pepper, cumin, & half of the cilantro. i topped it all off with the onion mixture and half a squeezed lime. cover, baked it. when finished i topped it with the remaining cilantro and squeezed the rest of the lime on top. not perfect, but getting there!

Pico de Gallo Chicken Quesadillas

The quesadillas stand alone really don't have very much flavor which is why this isn't a five star review. I would give this a two or a three because of that but the pico is so refreshing and good that it makes up for it. I think the downer is that the chicken really has no taste to it. If I do make this again, it'll be with a spicier cheese and some fajita or taco seasoning that would compliment the pico.

Garlic Prime Rib

Goodness, this was so yum terrific. We had sort of a battle with my MIL about how to follow this vs. logic and I totally think that following this to a T is the best way. I will so make this for Christmas again. Kudos to the chef!

Double Tomato Bruschetta

Heck yes, these were so good. I heart tomatoes and this is really 110% as good or better than anything you can buy out and about. I did omit the sun dried tomatoes cause I don't like the texture but it still so rocked. Also I used italian bread as opposed to french but whatever, it was still gone in 2.5 seconds. You'll love it, try it!

Grilled Buffalo Wings

This was one of the very first recipes I tried when I first stayed at home. My husband is a wing fanatic and I was so scared that I would do a bad job. HOWEVER, these so were awesome and totally impressed him. GO FOR IT!

Quick Pizza Sandwiches

My daughter so LOVES this for lunch. She makes sure that I get the rolls to make them when we go grocery shopping. I use the plum tomato paste with a little sprinkle of italian seasoning and it so rocks. Also, I give it a little parm cheese too. If I'm hungry I'll mix baby bella mushrooms with a drizzle of EVOO and a clove of minced garlic in a bowl and stick it in the microwave for about 30 seconds. I use the mushrooms & garlic for the inside and coat the outside with the remaining EVOO and WOW, it's great. Fabulous recipe!!

Coconut (Haupia) and Chocolate Pie

This was really different in texture than any pie filling I've made. I knew that from reading the stuff from the submitter but wanted to give it a whirl anyway. It wasn't a bummer and it didn't taste bad, just not really to our liking. FYI - I did add coconut extract & used milk chocolate chips like other users and still found the coconut layer to be kind of bland and the chocolate to be over powering. The best part of the pie to me was what I garnished it with - toasted coconut flakes and toasted macadamia nuts. Otherwise, I am not making it again but if you are brave and like a gelatin type of texture, you should go for it!
