Addictive Sweet Potato Burritos

One Bowl Buttercream Frosting

I love this recipe for frosting the Chocolate Eclair from this site. I originally found this exact frosting recipe on the back of a Ghiradelli Cocoa can. I think using a good cocoa makes a big difference. This recipe is easy and delicious and one of my favorites that I have used countless times. I always beat the butter first and sift in the cocoa and sugar before adding the remaining ingredients. I beat it for a good amount of time at the end, too. Mmmm...delicious!

Taco Seasoning I

It's a bit spicy for us, so we make a mild version by cutting back on the chili. But, I always keep it on hand and never buy taco seasoning anymore. We also use this in the Seven Layer Taco Dip from this site.

Chocolate Eclair Cake

This recipe calls for too much whipped cream (as others have stated). A much richer flavor comes from using 3 boxes of pudding mix. And, I can't encourage you enough to make your own frosting for this (I highly recommend "One Bowl Buttercream Frosting" from this site). For this photo I layered the ingredients in a square pan lined with plastic wrap (I sprayed the plastic lightly with cooking spray). I chilled it overnight and inverted it on a plate. I then frosted the top (with the above mentioned frosting!) and dusted the sides with cocoa and chocolate shavings.

Pesto Tuna Salad with Sun-Dried Tomatoes

I am rating this 4 stars because it's way too much pesto as most other reviewers have noted. I used half the pesto and served this on toasted ciabatta. Oh my goodness, this is a gourmet sandwich! Delicious!! Even my husband (who *hates* tuna) finished his sandwich and went back for seconds. I recommend the "Pesto Sauce" recipe from this site to use in this yummy sandwich.

Pretty Chicken Marinade

This is my most requested recipe. I often make this for dinner guests and big barbeques. I make the marinade in advance (at least the day before). I sometimes split the breast of chicken in half width-wise to make thin pieces that cook quickly. I have marinated it them for varying lengths of time and always get great results!

Super Easy Chicken Noodle Soup

This is a great recipe and should be called "Simply Chicken Noodle". It's simple to make and is simply chicken and noodles. It's so easy my kids made it today. We have made this recipe countless times and it's a great stand in for a can of chicken noodle soup - and much tastier. It works well with any add-ins you like. I generally don't add anything (well, sometimes I sprinkle a bit of parsley in it) but I use linguine or angel hair pasta broken into 1" pieces instead of egg noodles. Great soup!

Lemon Poke Cake II

Perfectly easy, fresh, lemony cake. I topped it with a lemony whipped cream topping (4 oz cream cheese, 1 c. powdered sugar, 1 c. cool whip, the juice of one lemon and 1 tsp lemon zest). We love lemon so I only use fresh squeezed lemon juice which I think makes a difference and I add a bit of lemon juice to the cake.

Chunky Marinara Sauce

I love this marinara! It's so easy! I double the garlic and the sugar. This is a snap to make. I like to serve this as an accompaniment for the Zucchini Patties from this site.

This was a great "last minute/no time to bake" cake. It was not *excellent* but definitely works as a good dessert in a pinch. I added 2 eggs as other suggested. I also used the Satiny Chocolate Glaze from this site.

Key Lime Pie VIII

I made two batches of this recipe side by side. But, I left out (inadvertantly) the pudding mix in one of the batches....and that batch was SO much better! I also tried this crumbling a graham cracker crust into individual size footed glass bowls. They were adorable and delicious (without the pudding!) Lastly,I found a *huge* difference in using fresh limes vs. bottled key lime juice. The bottled juice left a stong imitation lime after taste. I'll only use fresh lime juice now.

Truck-Stop Buttermilk Pancakes

I learned a lot about pancake making by reading through the reviews. I made this using the exact ingredients - no substitutions - and these were *excellent*! Here's what I learned from other reviewers....melt the butter then let it sit to cool, let the eggs and milk sit out to come to room temp, DO NOT OVERMIX, cook them a bit lower and slower than a box mix, sift the dry ingredients twice, and don't sub the buttermilk! We *loved* these fluffy pancakes and, as written, the recipe fed our family of 8 and we even had about 20 pancakes left! A 1/4 cup measuring scoop works great for a good size pancake. And, we added blueberries for my husband's pancakes and coated them with a bit of the dry mix to keep them from sinking as one reviewer suggested. EXCELLENT recipe!

Heavenly Chipped Chocolate and Hazelnut Cheesecake

If you have never made a cheesecake, this is a great recipe for you! It doesn't require the daunting "water bath" that most cheesecakes require. I'm giving it a 5 because of the fairly easy preparation (okay, the crust was time consuming and I didn't dip the hazelnuts in chocolate for the top), the great presentation (this looks fabulous and expensive), and the *delicious* flavor. BUT, I must admit it didn't quite taste the rich hazelnutty way I expected. I crumbled a chocolate hazelnut bar on the top and when I tasted a piece of the bar I realized that was the flavor I was hoping for (like Nutella) but the hazelnut liqueur just wasn't able to give it that flavor. Next time I might spread Nutella across it the top instead of the chocolate/hazelnut liqueur mixture. All that said, I still think this is a fantastic cheesecake and it is definitely worth trying if this is your first attempt at cheesecake!

Lemonade Cake II

This is a great recipe...very lemony, very fresh for summer baking, and EASY!! Honestly, most of you out there will know it's from a box....but, ultimately, I believe your family and guests will love it. This is the perfect summer time light dessert when you don't want to spend a lot of time in the kitchen. My 14 year old son made this for our family and guests - everyone loved it.

Banana Pancakes I

The flavor was good but I had a tough time cooking them so that they wouldn't seem wet inside from the banana. I found that a medium low heat worked best but several pancakes in the experimental phase were mushy inside. Again, the flavor is good. Definitely 5 stars for flavor but I gave it 4 stars because these were flat and not fluffy. I even tried sifting the flour which is the usual requirement for fluffy pancakes.

Orzo with Parmesan and Basil

This was a nice side dish - a good change from rice or other pastas. We love it. We had to use dried basil but can imagine that it would be fantastic with fresh basil. Very simple - my 15 year old son made it for us tonight.
