Sukhothai Pad Thai

Tastes amazing. I made this recipe following Bes's Apr. 28, 2006 recommendations. I also cooked this with chicken instead of tofu - I marinated thinly sliced chicken breast with 1 tsp light soy sauce, 1 tsp dark soy sauce, pinch of salt, 1/2 tsp sugar, 1 tsp corn starch and stir fried it before adding it to the eggs as in part 2 of the instructions.

My Mother-in-Law's Plum Bread

Wow yummy! I used 1 cup of brown sugar in total for the recipe since that was all the sugar I had in the house. It turned out amazing. What a great way to use up prunes from the farmer's market.

Crazy Cake

Good base recipe. Note to self... do not use peanut oil (which is what I had in the house) since it gives it a peanut buttery smell to the recipe. I substituted sugar for maple syrup since I didn't have any at home. Even with the changes it turned out really good. ^.^

Beth's Spicy Oatmeal Raisin Cookies

I adjusted the recipe to make it vegan. I used 1/2 cup Earth Balance margarine (vegetable oil works too), 1/2 cup applesauce to replace the butter and shortening. I used 2 tbs ground flaxseed with 6 tbs water to replace the eggs. I also upped the ground cinnamon to 2 tsp, and added 1 tsp ground nutmeg, and 2 tsp ground allspice. Baked it for 9 minutes. It was delicious. I'm sure the original recipe would be very good too but I didn't have eggs on hand when I made it.

Peppy's Pita Bread

Delicious! I made it a few times as written, although I kneaded it by hand instead of using a bread machine. I also tried making it with whole wheat flour (replaced 3/4 c of the flour with whole wheat flour). Both came out delicious. My Persian friend who grew up with pita bread loved it too.
