Jacky's Fruit and Yogurt Muffins

these were fantastic. I used pineapple instead of blueberries and I didn't have any baking powder so added a little more baking soda. LOVED these. Mine turned out a little crispy on the top and super moist inside - a great combination. Gonna make them again this afternoon but will use the baking powder this time. I also want to try coconut flour with this as well - maybe next time. Update - made them again but with gluten- free flour and a cup of drained crushed pineapple. Not as moist as the first time but still pretty yummy. I would add more pineapple and maybe leave some of the liquid in. Give it a try!

Kalua Pig in a Slow Cooker

Easy! I used about a 3 lb. pork roast w/ the bone in. Forgot to cut back on other ingredients with a smaller portion of meat but still turned out TASTY. Cooked for 11 hours. Someday I'll try the recipe as it is but this still was VERY GOOD! Guests love it and I served mine with coleslaw on the bun. Everyone will like this!

Sweet Restaurant Slaw

Easy and delicious - I served it on a bun with Kahula pork (another recipe here) and it was fantastic. A little on the sweet side for those who don't like their slaw sweet.

Honey Baked Chicken II

I made this last night and used 4 leg quarters. It was fantastic! I live at a high altitude so it took really long to cook - I would turn up the temp to 400 the entire time because I was always opening the oven to baste it. I did the foil over the top until the last 15-20 minutes. Has a great flavor and I served it over jasmine rice. VERY GOOD!!
