Too Much Chocolate Cake

made this for the bf and my cousins, they loved it! Its a good base to build on or substitute with your available ingredients. For me the changes i made were - yoghurt instead of sour cream, and followed the reviews to half the oil (i used 100ml) and added about 100ml milk. I used only the 3.9oz pudding pack, strong coffee instead of water and tossed in about 2 heaping Tbsp of cocoa for a stronger chocolate taste. Cooked for way longer than 55mins, 1.5 hrs instead.

Sweet Dinner Rolls

Thanks so much for a great recipe! I don't have a bread machine and i've never had much luck with bread recipes making them the traditional way...they're either too hard, too chewy, somewhat uncooked etc. This turned out absolutely perfect. I nuked the milk and water for abt 30 seconds, stirred in the sugar, addd the yeast and waited for 20 mins. Then i added in the butter, egg and salt, and lastly the flour in slow spoonfuls. Kneaded it for 25 minutes or so, let it rise for an hr, then rolled it out and spreaded a mix of dried fruits soaked in honey and rum. Roll the dough back up, plopped it in a pan and let it rise for another hour. Did a simple egg white wash, sprinkled cinnamon sugar and some nuts and baked it for 25 mins or so. The rolls were fluffy, light and soft. Fab! only note was that i saw the review of it being not sweet enough so i upped the sugar by another half. Even my mom was impressed and she is one HARD nut to crack *puffs out chest*

Apple Ugly Cake

Very average, nobody could really taste the apple, just a generic somewhat fruity sweetness.. It was also very dense, probably because of all the oil? maybe i should have substituted some of the oil with applesauce. The only change i did was to cut down some sugar, to about 140g and the sweetness was just nice. This tastes better when chilled though, and goes well with a cream cheese frosting, to give it a slightly more complex flavour.

Big Soft Ginger Cookies

The cookies were way too sweet, despite me reducing the sugar to 140g, and were so soft they felt more like cakes. Maybe it's because of the sugar reduction, but had i not done so they would have been even sweeter, and the resulting sugar rush might have blown my head off. Also, I added half a teaspoon more ginger and still no one could taste it much over the sweetness. Not sure what went wrong, and most probably it's due to my own (lack of) skills, but not a recipe i'm going to try again soon.

Pineapple Upside-Down Cake VII

comes out really pretty but tastes just meh. i used a yellow cake mix for the colour, cut the sugar by more than half (only used 3 oz or so) and cut the butter by half and it was still plenty sweet, so i don't know how it would have been if i had used the full amount. One other thing to note(my own fault here), i didn't have a cast iron pan, so i used a 9" pan, and it ended up taking me almost 70-80 minutes instead of the 30 mins stated on the box. It smelled great while cooking but nothing special otherwise so don't think i'll try it again.

White Chocolate Macadamia Nut Cookies IV

I halved the chips and nuts, and used a mix of plain roasted and honey roasted macadamias, but followed the rest. Taste wise these are 5 stars, but i rated a 4 because i had some problems with the textures. I put my first batch in for about 11 minutes or so, and they came out looking too dark, although the texture was soft and chewy, most of the white chocolate chips had sunk to the bottom and caramelized, so it tasted like little crunchy bits of burnt sugar instead of milky white chocolate. My second batch i baked for about 8-9 minutes, which resulted in golden brown cookies but were again too soft: they broke apart at the slightest pressure. The taste was awesome though, so it's worth trying again. Next time: i like crispier cookies so i will try either replacing the egg with milk, or bake 10-11 mins at a lower temp to see if i can get a crispier cookie. I will increase the nuts to around three quarters of the original but keep the white chocolate chips at the halved amount, and even then it was slightly too sweet, so i might reduce the sugar to 1/2 cup. Also, the cookies will spread, i got about 20 roughly 3" diameter cookies out of mine using about a tablespn of dough each, next time i will do them half the size to get bite sized cookies. *edited 16/8/10- changed to 5 stars because my cousin just paid me twenty bucks to make a new batch for him.

Banana Banana Bread

I followed the recipe exactly except fora few minor additions: 1 tsp of vanilla, 1/2 tsp cinamon sugar and some raisins i had on hand. I didn't read the reviews before i made this; but looked through them only after i put the cake into the oven and was abit alarmed when i read all the reviews saying that it won't cook properly in the middle. So i turned down the heat from 175 to 160 (degrees C) and lengthened the cooking time about 20 minutes more. I was also worried about the reviews saying it was bland but luckily none of those happened; the cake rose beautifully, and with the extra 20 mins or so it was cooked through uniformly. The texture was moist and soft but held together well, no crumbling or falling apart. I don't know if the slight additions i made had such a big difference, but i didn't find the cake bland or tasteless, it wasn't too sweet, but sweet enough to compliment the taste of the bananas. The scattered raisins provided the occasional burst of extra sweetness. My mom liked it and said it was better than some store bought ones, and she is Fussy. So, a keeper for me.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

well received by my family and friends, these are moist and chewy. i added a little less sugar and used 4 oz chocolate chips. next time i'd probably use a little more peanut butter and chocolate, as i'd like the taste of peanut butter to be stronger. My first batch turned out a little too soft, the second just nice so maybe i preheated the oven too late. A little greasy though.

Alyson's Broccoli Salad

fab!i brought it for a dinner party and it was well loved, despite the fact that most of my family HATES fresh veggies. you can just change/sub ingredients and it still tastes great. the changes i made were: i subbed grapes for raisins, basically the same thing, but juicier! instead of normal sunflower seeds i used honey roasted ones, which added a nice roasted flavor and went fab with the bacon. i didn't have onions so i omitted that, and added chopped potatoes and eggs. great recipe, thanks!

Good Old Fashioned Pancakes

fab!! these turned out great, both looks and taste wise. it was slightly too thick but nothing a little more egg won't fix. i also added vanilla for flavouring and chocolate chips to make chocolate chip pancakes. my brother loved them so much he asked for them two days in a row :> *THREE days in a row! wow.

Broiled Tilapia Parmesan

i didn't have celery salt so i used garlic salt instead, and omitted the lemon juice cos i didn't have any. Still turned out great though! My brother is usually very hard to please, and even he likes this!Plus, it smells great when it's cooking!

Potluck Spareribs

this was good! i added a bit more garlic powder and cooked it in the crockpot for a potluck party i had. before serving it i did a quick stirfry to caramelize the sauce. turned out fine, but slightly too sweet, probably will minus the amount of sugar next time.

Spanish Flan

gahhh. this turned out terrible but due to own fault. Was in a bit of a rush and forgot to cover with aluminium foil, thus ending up with a burnt Yorkshire pudding-like thing that was v.hard. Do not forget the aluminium foil!!

Eggless Milkless Butterless Cake

nice! i expected it to crumble as most eggless cakes do but it held together surprisingly well. i added more cinnamon sugar as don't have nutmeg. it's a little plain on its own so i sliced and sandwiched it with jam and made a frosting using a cream cheese substitute made of tofu. turned out just nice for my cousin, who's allergic to just about everything!

Pork-n-Beans Cake

i halved the recipe and substituted the eggs because my cousin was allergic to eggs...and ended up with it not really binding well and crumbling all over the place! the taste was nice but i thought it was way too sweet because the beans are quite sweet in the first place. next time i'll probably cut down on the sugar.
