Hearty Pasta Tomato Soup

I changed this recipe only because I am dieting, this is definately a keeper!! I used italian turkey sausage and Schwans cheese tortellini (low fat), and used celery in place of green pepper (because that's what I had on hand), also used Splenda instead of sugar. OMG! This was out of this world good (and for those of you on Weight Watchers - ONLY 2 POINTS per serving!!) My family had no idea it was low-fat & low cal, even my 8 year old asked for seconds. It does make a huge batch and wouldn't fit in my crock pot - that's my only complaint!! Will definately make again and again.

Mascarpone Substitute

Thank you sooooo much for sharing this with those of us who live in tiny towns that don't sell mascarpone! Not a single person knew I substituted this when they raved about my tiramisu (also from this site). I will never travel 70 miles to spend $9 a tub again!! Thanks again

Tiramisu II

AWESOME RECIPE!! I searched this site & others for days looking for a tiramisu recipe that was restaurant quality but still within my abilities - and I found it with this one! I live in a rather small town, over an hour drive to a grocery store that sells mascarpone & lady fingers, so I made the substitute mascarpone (found on this website) and used pound cake cut into 1/4 inch slices and it still turned out WONDERFUL! I will definately be adding this to my favorites!!

Pumpkin Pie Pudding

This was very good & way easy! I doubled the recipe for a work function and cooked on high - it took about 4 hours. I think I will like it better cooled - but have gotten many compliments. I served it with gingersnaps and cool whip. It makes an impressive dessert for fall.

Chocolate Mocha Liqueur Cake I

Excellent cake! I love coffee liquor and am always looking for recipes to cook with it. I used a dark chocolate cake mix and chocolate pudding, also threw in a half a bag of semi-sweet chocolate chips that I had left over. I don't care for vodka, so I substituted irish cream liquor instead. Sprinkled with powdered sugar as it already awesome without any frosting! Thanks for sharing! This will definately become a holiday tradition at my house.

Cream Corn Like No Other

Excellent recipe! I like slow cooker corn w/ cream cheese and was searching for something similar to make for dinner since I didn't have time to put anything in the crock pot when I came upon this recipe - and am I glad I did!! This was even better!I did blend about 1/2 the mixture as some other reviewers suggested, just to make it "creamed" and used more corn & less sauce, but I still give the recipe 5 stars for flavor & convienience! thanks for posting

Baked Pumpkin Bread

I specifically searched for pumpkin bread knowing I had half a can left-over from the holidays. After sifting my dry ingredients, imagine my surprise when I pulled my pumpkin out of the fridge and only had about 1/2 a cup! Oh, well - I was already this far into the recipe, so I mashed two bananas, added my little bit of pumpkin and hoped for the best. My husband and son said it's the best bread I have ever made! I never told them it was also low-fat (I used lite country crock in place of the softened butter for even less fat & calories). I will definately be making this again and again!

Roasted Garlic Cauliflower

I absolutely love this recipe!! I would give it 10 stars if I could. I have been dieting for some time now and it is very rare to find something so delicious be so good for you! I used olive oil cooking spray instead of olive oil for fewer calories, and as I had no fresh garlic, I used garlic salt with parsley flakes, and had no trouble with anything burning. It's a good thing my family also loved this, because I will be cooking it all the time!

Magic Peanut Butter Middles

ok, Big ice storm today - I can't get to work, and hubby is on the fire dept so I am stuck at home with nothing to do, luckily I have electricity! That's why I decided to tackle something that others said was soooo time consuming. I have to admit, it only took me 1 hour, from beginning to end. I made the filling first, refrigerating as others suggested while making the rest. I only had about 1/2 cup of creamy pb, so I used it with 1/4 cup of chunky in the filling, and chunky in the cookie part. I used others suggestions of 2TBSP sour cream in the cookie, and tasted the batter before assembing, and thought it was pretty blah, so I added 1 cup semi-sweet choc chips -the perfect addition!! I used about a teaspoon of filling per ball, work them well between your hands and they won't be too crumbly. Don't be afraid of too much flour on your hands while working the chocolate, it's what keeps it from being so sticky. A little extra sugar on the tops after pressing them out, and they turned out heavenly! So far, I am the only one to try them, I hope there are some left by the time hubby gets home!! This is definately a keeper!!

Lucy's Mac and Corn

Do not drain the corn and don't cook the macaroni first! I followed the directions exactly except doubled it and put in crock pot instead of oven and this was the best Mac and cheese ever! First thing gone at the potluck! Will definitely be a keeper!

Irish Cream Truffle Fudge

Easy to make & EXCELLENT!! I made NO revisions to this recipe other than using a larger pan than suggested (tastes the same, just not as thick!) AWESOME flavor! I will definately be adding this to my annual christmas candies!!

Pecan Pie Bars I

This was a huge hit at Thanksgiving! I had an 11" x 16" jellyroll, so I made 1 1/2 times the recipe - followed it to the letter except for substituting crisco butter flavor stix in the crust. It only needs the 25 minutes to cook if you use a jellyroll pan, more if use a cake pan as it thicker. Awesome recipe - I usually buy a boxed mix to make pecan bars but never again. These were easy to make and tasted way better. Thanks for sharing!

Creamy Vegetable Chowder

Excellent recipe! I had some left-over ham from the holidays that I wanted to use up, and I added about 1/2 a bag of left-over frozen corn I had and this made an amazingly good soup! I have never been good at homemade soup, but this turned out well! Thanks for the recipe!

No Bake Camping Cookies

I am not a "professional", but I am a pretty experienced cook, and I love to bake and try new recipes. Finishing up my christmas baking, I thought I'd try one last easy recipe. Boy am I dissapointed! I had to throw the whole batch in the garbage - There is absolutely nothing in this recipe that makes it set up, and when other reviewers said "messy" and "sticky" to roll, what an understatement! There is no way to roll these in balls! Sorry to say but this recipe gets my first bad rating.
