ok, Big ice storm today - I can't get to work, and hubby is on the fire dept so I am stuck at home with nothing to do, luckily I have electricity! That's why I decided to tackle something that others said was soooo time consuming. I have to admit, it only took me 1 hour, from beginning to end. I made the filling first, refrigerating as others suggested while making the rest. I only had about 1/2 cup of creamy pb, so I used it with 1/4 cup of chunky in the filling, and chunky in the cookie part. I used others suggestions of 2TBSP sour cream in the cookie, and tasted the batter before assembing, and thought it was pretty blah, so I added 1 cup semi-sweet choc chips -the perfect addition!! I used about a teaspoon of filling per ball, work them well between your hands and they won't be too crumbly. Don't be afraid of too much flour on your hands while working the chocolate, it's what keeps it from being so sticky. A little extra sugar on the tops after pressing them out, and they turned out heavenly! So far, I am the only one to try them, I hope there are some left by the time hubby gets home!! This is definately a keeper!!
