Fiesta Chicken

I didn't have all the ingredients on hand so I improvised a bit and it still turned out good! I broke up tortilla chips in the bottom of a 1.5 quart baking dish, topped with shredded leftover BBQ chicken from the night before, topped with a mixture of cream of chicken soup and chunky blackbean and corn salsa (about 1:1) and topped it off with shredded cheese. SUPER easy and pretty darn good.

Beef Bourguignon III

Very delicious! I increased the amount of wine and broth and marinated for 5hrs. instead of 3hrs. I used a nice, smooth Pinot Noir however, next time I think I will use a dry Cab Sav to intensify the flavors.

Be CAREFUL! I have a charcoal grill and I guess I had too many coals... these babies got scorched on the bottom in no time flat. Other than that, they're great :) I'm going to make them again with less charcoal this time!

French Onion Soup Gratinee

Very good! I used a little less broth (total of 56 oz, half beef, half chicken), I used dry herbs (1sp thyme, 2tsp parsley) and just left them in. I only used Swiss to top it off and it was still wonderful. Thanks!

Slow Cooker Chicken Taco Soup

SUPER GOOD! I am a big fan of brews with hearty flavors so I opted to use Bass Ale in thie recipe. It was perfect as it lended a wonderfully complimentary "beer flavor" without being overbearing. What a great, easy and affordable dish!
