Eileen's Meatloaf

Great variation on meatloaf, and there are many. I used 1 lb lean hamburger and half lb. italian sausage. 1 16 0z. light sour cream. 2 onion soup pkg. several tb. spoons worchshire. 2 eggs. Cup and half italian bread crumbs. 1 diced onion and a minced jap for a kick. Salt and pepper. Cooked @ 350 for about an hour covered. Topped with tomato sauce cooked uncovered another 15 minutes. The result was a giant italian meatball in the form of a meatloaf. Very good !!! Makes good sandwiches or crumble for pizza topping.

Bubba's Best BBQ Sauce

I will never go back to store bought..Kudos to Bubba. Impress your guest with home made sauce that will have them smileing as they wipe BBQ sauce off their chin. A+ !!!

Layered Enchilada Bake

5 stars for easy and good. I use cumin and chili powder vs. taco seasoning. Less amount of salsa, everything else, however as a different twist I roll them up in a tortia top with enchilada sauce cheese and black olive slices, bake and serve with sour cream to top it of after baking....I'm sure the orignal way is good too!! Thumbs up !!

Zesty Slow Cooker Chicken Barbecue

Whats not to like!!? Tender chicken breast, shredded and swimming in bbq sauce. Super easy and super good. I serve on a toasted bun topped with coleslaw North Carolina style. Yea baby!! Thanks!!

Layered Chicken and Black Bean Enchilada Casserole

Good stuff! I used extra enchilada sauce. As well as toasting the corn tortillas for 3 min on 450 degrees in oven. Cooked chicken breasts in the oven covered with cumin and salt. My mixture contained chicken cut in small cubes, cilantro, black beans, minced garlic, corn, black olives sliced all tossed together. The rest of the way just like the original recipe. I think red or green enchilada sauce according to preference, I like either. Kick it up a notch with japs or hot sauce. Thumbs way up.

Sauerkraut-Stuffed Slow-Cooked Pork Roast

I followed the recipe and added this. I used 2 cans of sauerkraut, what kraut I did'nt use after I stuffed the roast I surrounded around the roast in the crock pot. Then poured a bottle of my fav BBQ sauce over the roast and kraut and added about a half can of beer , I suppose broth or water would do or just BBQ sauce only. Cooked 8-9 hrs. Fabulous!! Served as a main dish. A couple of days later warmed the left overs and served on toasted kaiser rolls, even better!! The kraut BBQ sauce combo very flavorful with pork. Thumbs way up !!

Slow Cooker Chicken Creole

I love New Orleans style cooking! This is all so easy to make and full of flavor. I followed the recipe and added 1 8oz tomato paste, 1 can of chicken broth, Tony Charachere's creole spice, extra celery, fresh thick cut mushrooms, good amount of minced garlic, I like to use okra instead of green pepper, 1 can Rotel as well as 1 can of stewed tomatoes .. Cooked for 9hrs, 8 would have been fine. Served with rice. Ah so good. 1 jalapeno gave it a kick!! Left overs even better!! I guess you get the idea I really loved this will make again and again...
