Triple Dipped Fried Chicken

Here is a really easy tip to check the temp of your oil - if you place the tip of a wooden spoon in the oil, and little bubbles form around it, the oil is ready to go.

Hot Asiago and Spinach Dip

Made a few changes - I left out the parsley since I didn't have any on hand. I only used a 10oz box of frozen spinach, and shredded an extra 1/4C of cheese to sprinkle on top. Also, I've started making this dip with light mayo, light sour cream & 1/3 less fat cream cheese - still tastes just as good (but is better for you!). This has become my go-to hot dip recipe for any gathering. So yummy.

Mom's Island Treasures

Used 1 1/2 sticks of butter (3/4 cup) - turned out amazing. Best cookies I have ever made. I also made the cookies a few other times using chopped macadamia nuts (1/2 cup)- really yummy substitute for the pecans.

Lower Fat Banana Bread II

Made this recipe almost exactly (only added 1 tsp of cinnamon, per some other reviews). Very moist, but a little bland.. Might be a "5 star" recipe with a little more cinnamon or maybe some apples.. but overall, very good!

Clone of a Cinnabon

Super easy tip: You can buy bread dough in the freezer section of your grocery store. Simply defrost the loaf in the fridge (so it doesn't rise too much) and then roll it out & follow the rest of the recipe. Also, I found that after you sprinkle the cinnamon/sugar mix onto the dough, pat it down. It keeps the mix in the cinnamon roll! Great recipe, thanks!

Traditional Mashed Potatoes

Out of this world!! I used part half and half and part milk (instead of all milk). They turned out so creamy and delicious that everyone at the table had seconds! My husband says he has never tasted better mashed potatoes - he insists I double the recipe so there will be lots of leftovers for him!

Juicy Roasted Chicken

I was a little intimidated since I've never roasted a chicken before, but this recipe was super easy & tasted delicious! I was out of onion powder, so I substituted garlic powder - it turned out so great! I've never received so many compliments on any chicken dish before! I will continue to use this recipe for many years to come.
